Idiyappam | Rice Flour String Hoppers - Breakfast Recipe

Idiyappam / string rice noodles is a famous  South Indian recipe that is served with sweetened coconut milk. It is also popular as  Noolappam or Noolputtu. A healthy steamed food hence good to have for breakfast or dinner. There are many variety of Idiyappam prepared using different flours like ragi, wheat or millet which I will share with you soon.

My Amma use to make it in a more traditional way. She use to grind the rice ,steam the batter like idli which is  then pressed and steamed again for delicious idiyappam. Today I'm   sharing my friend's recipe with a quick method, soon I will post my amma recipe. Though the preparation process seems to be daunting, once you get to know the key to proper rice flour dough consistency, it is pretty easy. All you need is Idiyappam maker to make string noodles. 
Tip:
Make your own homemade rice flour for idiyappam. Wash and drain rice. Spread it in a clean cloth to dry completely. Grind it and sift to get fine flour. That's it homemade idiyappam flour is ready to use.

Idiyappam | Rice String Hopper - Breakfast Recipe
Preparation Time:15 minutes
Cooking Time: 5-10 minutes
Yield: Serves 4

Ingredients:

Rice flour / Idiyappam flour- 2 cups
Salt to taste
Water - 1 1/2 -2 cups approx.
Oil as needed

Method:

Dry roast rice flour if you have ready in hand and tranfer to the large plate which is suitable for mixing.(If you use readily available Idiyappam mix no need to roast). Bring water to boil with salt added.
Pour the water to flour little by little and mix well using spoon/fork. Once the flour comes together as a dough as shown in the below picture, stop adding water.
Cover the dough with a lid and allow it to rest for 10 minutes. Smear little oil onto the palms and knead the dough well. 
Add a cup of water to the steamer and let it get hot. Meanwhile fill the idiyappam maker with the smooth dough, rotate the handle and fill in the idiyappam onto the each holes of the Idli plate(greased with oil). 
Stack up in the idli cooker or steamer. Steam for 5 minutes in high flame.
Remove and serve hot Idiyappam with vegetable kurma and coconut milk.

  
Serving Suggestion:
Serve the idiyappam with
Vegetable Stew
Vegetable Kurma
Peas Kurma(no onion,no garlic)

Note:

  • Prepare the dough as shown in the picture to get soft and lace idiyappam. Otherwise while pressing the dough it might either break in between or would be difficult to press. 
  • Always cover the remaining dough with clean wet cloth to avoid dryness.
  • Serve with grated coconut and sugar to add more taste.

wah this idiyappam is really a noolappam looks like so thin threaded..kuruma goes well with this appam..gulp:)
