Plantain curry brings forth an interesting vegetable recipe that is prepared with raw plantain or banana. When really tired of cooking and wants to eat something which gets prepared fast as super spicy, tangy and delicious in a perfect south-Indian style of home  food......try this.
The plantains are steam cooked and then cooked with onion, tomato and spice powders. A perfect dry curry to go with hot rice. The same recipe can be followed to try with other vegetables in place of plantain. A good recipe to try for beginners....

Vazhakkai Curry

Preparation & Cooking Time : 25 minutes

Yield : Serves 2 


Ingredients:

Vazhakkai/ Plantain - 1 large
Onion - 1 large
Tomato - 2 medium size
Ginger-Garlic Paste - 1 tsp
Chilli  Powder - 1 tsp
Coriander Powder - 1 1/2 tsp
Turmeric Powder - 1/2 tsp
Mustard seeds - 1tsp
cumin seeds - 1 tsp
curry leaves - 1 spring
Asafoetida - 1/4 tsp
Oil - 2 tbsp
Salt to Taste

Method:

  1. Trim the edges of the plantain and divide into two pieces. Steam cook for 5 minutes. Cool for a while and peel the skin. Cut into thin circles and keep.
  2. Finely chop the onion and tomatoes. Keep aside.
  3. Heat a fry pan, add a tbsp of oil. Throw in mustard seeds, cumin seeds, curry leaves and asafoetida. 
  4. Tip in the chopped onion and saute for a minute. Add ginger-garlic paste and saute well until raw smell vanish. Add the tomatoes and cook for 2 minutes. 
  5. Now add the chilli powder, coriander powder, turmeric powder and needed salt. Stir well.
  6. Add the plantain pieces and stir to combine well with masala. Cover with lid, cook for 5 - 7 minutes over low flame .

Note:

  • Steam cook the plantain for the specifed time. Do not over cook else will become mushy.
  • Make variation by adding one boiled potato along with plantain to prepare more.
  • Also try the same procedure of onion-tomato base to prepare different vegetable curry. Use vegetables like cauliflower, french beans, lady's finger, brinjals.
