Tabbouleh Salad Recipe | Broken Wheat Salad


Tabbouleh salad is classic and fresh Mediterranean salad which is very famous in Middle east. It is served as side dish along with pita bread, hummus and many more. It is made from fresh veggies, bulgur and herbs like mint and parsley leaves. This combination makes it so flavourful and healthy that I make it many times a one pot meal. Try this simple and easy to follow recipe to make this delicious Lebanese Tabbouleh Salad.


Tabbouleh Salad Recipe

Preparation Time : 15 minutes

Yield : 4 serving


Ingredients:

  • Broken wheat/ bulgur - 1/2 cup
  • Cooked chickpeas - 2 tbsp
  • Cucumber/zucchini  - 1/2 cup chopped
  • Tomato - 1 no big size finely chopped
  • Onion - 1 small size finely chopped
  • Mint leaves - 1/4 cup washed and finely chopped
  • Parsley - 1/4 cup washed and finely chopped
  • Salt as per taste
  • Freshly squished lemon juice - 2 tbsp
  • Olive oil - 1 tbsp
  • 7 mix spices / chat masala - 1 tsp (optional)

Method:

  1. Wash broken wheat and add it in a cup of boiling water. Soak it for half n hour of until they fluff properly.
  2. keep it under running water for a while and drain out all the water completely. Each grain should be separated.
  3. In a large mixing bowl add together tomato, onion, cucumber, green leaves, chickpeas, and above prepared bugler.
  4. Toss them well to mix together and season it with salt, olive oil, lemon juice and mix spices if using. (Authentic medeterrane salad doesn't call for spices and taste delicious with lemon flavour as it is served as side dish. But I add chat masala when I make it for dinner as a one full pot dish).

Note:

  • Wheat bulgur can be replaced with cooked couscous or quinoa.
  • To make this salad more flavourful you can add more veggies as per your choice.
