Glutenfree Savoury Vegetable Pancake

Even me too..I made this savoury pancakes which is Gluten free, Egg free, healthy, delicious, quick and easy to make and with easily available ingredients. What else we would need to kick start our day with this amazing breakfast pancakes. Check it out how to make this healthy savoury vegetable pancakes to serve your breakfast in special way which will jump start your day with extra energy. Here goes the recipe............

Preparation & Cooking Time : 15 mins + 30 minutes

Yield : 7-8 pancakes


Ingredients:

Mixed Vegetables - 2 cups finely chopped (I used cabbage, carrot, onion, tomato, zucchini)
Corainder - 2 tbsp. finely chopped
Green chili - 1 tbsp. finely chopped
Brown Rice Flour - 1 cup
Besan - 1/4 cup
Green Mung Flour - 1/4 cup
Yogurt - 1 cup
Salt as per taste
Pepper powder as per taste
Chat Masala 1 tsp
Oil for cooking
Dates Tamarind Chutney and tomato ketchup for serving.

Method:

  1. Finely chop all vegetables using food processor. food processor will cut them all vegetables in equal size and very finely. If not using food processor grate them.
  2. In a large mixing bowl take out all vegetables and add chopped coriander and green chillies.
  3. Add brown rice flour, besan and green mung flour in it.
  4. Add curd and mix well. Add little water if required to get desired thick batter consistency.
  5. Finally season the batter with salt, pepper powder and chat masala.
  6. Keep it aside for at least 10 minutes.
  7. Heat the skillet and coat with few drops of oil/butter.
  8. Pour a ladle of batter in it and spread evenly into a circle.
  9. cook it on medium heat for 2-3 minutes or unit edges are brown.
  10. Turn it other side and cook another 2-3 minutes.
  11. Serve out in a plate. Cook all pancakes same way.
  12. Serve with dates and tamrind chutney (khatta meetha chat chutney) and tomato ketchup.
  13. Delicious healthy vegetable pancakes are ready to serve in your breakfast.


Note:

  • Choose vegetables as per your choice or availability.
  • To make it dairy free replace yogurt with pureed silken tofu and lemon juice.
