Chocolate Ganache Ice Cream | Homemade Eggless Chocolate Ice Cream



I had leftover chocolate ganache and whipped cream resting in my fridge. Last days we had enough of cakes and pudding so wanted to use them in some cool dessert. Then My son asked "Mumma, why don't you make my fav chocolate ice cream at home??". I never made it before and thought it will not come out as creamy and smooth without ice cream machine. I thought of giving it a try and freeze it 1st time. But It came out so hard with many ice crystals. And then I searched and learned how to make ice cream without machine. Final result is here in the pictures. It took all my patience and long hours but Ice cream was so smooth, creamy and easily scoopable. Here goes the recipe to make eggless homemade chocolate ice cream without machine.

Preparation & Cooking Time : 15 mins + setting time

Yield : 1 ltr (Approx)

Ingredients:

Heavy cream - 300 gms
Milk Powder - 2 cups
Powdered Sugar - 1 cup (Adjust sweetness as per your taste)
Chocolate Ganache - 1/2 cup (1:1 proportion of chocolate and cream)
Full cream Milk - 1 cup
Cocoa Powder - 2 tbsp.

Method:

  1. Warm milk in a sauce pan.
  2. Add sugar and milk powder in milk and stir it until dissolve properly.
  3. Add in Chocolate Ganache and cocoa powder. mix well.
  4. Whip cream separately until stiff and add it to above mixture.
  5. Blend the mixture rigorously. I used hand blender.
  6. Pour the mixture in tray and freeze it in freezer.
  7. Freeze it for at least 1 hour or until edges start to freeze.
  8. Remove it from freezer and again beat up and blend rigorously.
  9. Pour it in tray again freeze.
  10. Repeat freezing and blending process 1 or 2 more times.
  11. Once your ice cream reaches into smooth and creamy textures finally freeze it for 4-5 hours or until frozen completely.
  12. Chocolate ice cream is ready to serve.

Note:

  • It is advisable to use plastic or stainless still tray for freezing.
  • Freezing and blending rigorously is main process in homemade ice cream making. This will help to break the hard ice crystal into fine creamy smooth ice cream. You can repeat as many time to make your ice cream more creamy and smooth.
