Handvo - Authentic Gujarati Savoury Cake

Handvo is a authentic Gujarati savoury cake. It is absolutely healthy, nutritious and delicious. It can be served in breakfast or as evening brunch with tea or pack it in kids lunch box. We always try and eat those sinful sweet cakes but how about trying this healthy and savoury cake for a change. Here goes the recipe for how to make handvo.


Preparation Time : 5-6 hours

Cooking Time : 35-40 minuts

Yield : 6 servings

Ingredients:

Rice - 1 cup
Sooji - 1/2 cup
Toor Dal - 3/4 cup
Mixed Dal - 1 cup (Urad dal, Chana Dal, Split Green Moong dal)
Sour Curd - 1 cup
Bottle Gourd - 1 cup (finely grated)
Ginger - 1 tsp (Finely grated)
Chili - 2 tsp (finely chopped) (adjust as per your taste)
Salt as taste
Sugar - 4 tsp
Lemon Juice - 1 tsp
Soda Bi Carb - 1 tsp
Chili Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Sesame seeds - 1 tsp
Asafotida 1/4 tsp

For tempering
Oil - 2 tbsp.
Mustard Seeds - 2 tsp
Cumin seeds - 2 tsp
Sesame Seeds - 1 tsp
Dry Red Chili - 1 

Method:

  1. Mix rice and mixed dal together and grind them in coarse grainy powder same like sooji grains (Alternatively you can soak rice and dal separately for 4-5 hours and grind them to make better. but I always get fine paste when I grind soaked pulses and not the coarse which is needed to make best handvo batter. so I prefer to grind them dry and then soak.)
  2. Mix above prepared flour with sooji and add curd in it. Add required water to make thick batter. Keep it aside for fermentation for 4-5 hours.
  3. Once batter is ready preheat oven on 200 C and grease your baking tray.
  4. Add all spices in batter i.e. salt, chili powder, turmeric powder, sesame seeds, lemon juice, sugar, chili and ginger.
  5. Add grated bottle gourd mix the batter well. finally add soa bi carb and beat the batter. batter is ready.
  6. Pour batter in greased baking tray.
  7. For tempering heat the oil in kadai, add mustard, cumin and sesame seeds along with dry red chilli. Once they stop sputtering pour tempering over the batter evenly.
  8. Keep the baking tray in preheated oven and bake it for 35 to 40 mins or until the top crust start getting brown. do the done test using toothpick.
  9. Once done take the tray out let it cool for 15-20 minutes.
  10. Handvo is ready to serve. slice it and serve with green and red chutney.

Note:

  • You can add all your favourite grated veggies for variation. 
  • If not using Oven, alternatively you can cook it in non stick kadai. once the batter is ready, heat oil in kadai and add mustard, cumin and sesame seeds. now switch the heat in medium to low and slowly pour the batter in kadai. Cover the lead and let it cook on slow heat for about 10 minutes or until bottom crust is brown. once done the very carefully flip the hando in other side and cook again for 7-8 minutes. Cool it for a while. Slice it and serve it.
