Blueberry Muffins


Kids will love eating these muffins as many as they love making them. These deliciously cute muffins are really easy to make, and jut as easy to change too. Swap blueberry for cranberry or strawberry or peach or any fruit you would like to make muffin. Eat it for breakfast or as a snack with a glass of milk. Treat yourself when youu crave for some quickfix.

Preparation & Cooking Time :30 minutes

Yield :12 muffins


Ingredients:

Butter - 75 g
Milk - 1 cup
Dried or Fresh Blueberry Fruit - 1/2 to 1 cup
All  Purpose Flour - 2 cups
Salt - 1/4 tsp
Egg - 1, beaten
Baking Powder - 1 tbsp
Castor Sugar - 1/2 cup

Method:

  1. Melt Butter, add egg and milk and beat to combine.
  2. Sift the flour, sugar, baking powder, salt and add the fruit . Mix gently(don't over mix).
  3. Spoon the muffin mix into the greased muffin pans or silicon cupcake moulds(each about 1/2 full). 
  4. Pre-heat the oven to 180°C. Bake the muffins for 15-20 minutes. Test check with a fork, bake as needed for few minutes. Cool for 5 minutes.
  5. Carefully remove from the pan, run knife around sides before removing(if muffins are not in paper cups). Cool the muffin completely before storing.


Note:

  • The less time spent to mixing the ingredients together, the better. Too much liquid in the mixture yields soggy and flat muffins. Too less luiquid yields hard and hard muffin.
  • Always pre-heat oven  and grease the muffin pan before baking.
  • Swap the blueberry for any other fruit you have in hand.
