Eggless Basic Vanilla Sponge Cake

Eggless Sponge cake Perfect for base of any layered Cake or Pudding 



Basic Vanilla Sponge cake is basic cake which can be used for making any layered cake or Puddings. This Eggless Recipe is perfect as it gives exactly same texture, moisture and is fluffy, spongy same as with eggs.  It didn't crumble so perfect to slice and make layered cake. Try this easy recipe to make Eggless Vanilla Sponge Cake.


Preparation Time : 15 mins

Cooking Time : 30 mins.

Yield : 8" round cake

Ingredients:

All Purpose flour - 1 and 1/4 cup
Baking powder - 1 tsp
Baking soda - 1/2 tsp
Salt - 1/4 tsp
Powdered Sugar - 1 tbsp.
Condensed Milk - 1/2 can (150 ml approx.)
Water- 1/2 cup
Vinegar - 1 tbsp.
Vanilla Extract - 1 tbsp.
Melted Butter- 1/4 cup
 

Method:

  1. Preheat oven at 180 C/ 350 F for 15 minutes. Grease your cake pan and line it with baking paper.
  2. In a large mixing bowl sift together flour, baking soda, baking powder, and powdered sugar. Add in salt as well. Mix tell well.
  3. In another bowl mix condensed milk, butter, vanilla extract and vinegar. mix them well and add water in it. add water and whisk.
  4. Add liquid mixture in dry ingredients. mix well and give it a nice whisk to make smooth batter.
  5. Pour this batter in a prepared cake pan. Tap the pan to spread batter evenly.
  6. Keep the pan in preheated oven and bake it for 27-30 minutes. when the top and edges turning into light brown do the test check with toothpick. insert toothpick in centre, if its comes out clean cake is done.(Time differs in each oven so keep checking after 25 minutes. My oven took 30 mins.)
  7. Take it out of the oven cool it for 5 minutes. Run a knife to the edges and invert the cake from the pan. cool it completely on wire rake around 15 to 20 mniuts.
  8. Basic Vanilla sponge cake is ready. Slice it and eat it directly or cover it with your frosting or use it to make pudding of your choice.
