Orange Pulao | How to prepare orange pulao


Today morning I was so confused of  what to cook for my husband's lunch box, I opened my fridge to look up for the ingredients and to my great wonder there was less veggie and couple of orange, my mind got stuck up of what to do. Immediately I got an idea of making Orange Pulao which I learned from my MIL. I liked the orange color of the pulao and it tasted extremely delicious. Here I am sharing same recipe with easy steps.



Preparation & Cooking Time:45 minutes
Yield: Serves 2

Ingredients:
Basmati Rice-2cups
Orange Juice-1cup
Coconut Milk-1cup
Water-2cups
Onion-1large thin sliced
Green peas-1/2cup(cooked)
Carrot and French Beans - 1 cup 
Mint leaves-1/4cup finely chopped
Cilantro -1/4cup finely chopped
Green chilli-3
Ginger-1tbsp chopped
Garlic-1tbsp chopped
Oil-2tbsp
Ghee -1tbsp
Salt as needed
Whole Garam Masala:
Cinnamon stick-1/2inch piece
Bay Leaf-2 piece
Clove-4no
Fennel seeds-1/2tsp
StarAnise-1

Method:
  1. Wash and soak basmati rice in 2cups of water for about 45 minutes.
  2. Grind green chilli,ginger and garlic to smooth paste using blender/mixer.
  3. Heat the heavy bottom fry pan, add in oil and ghee.
  4. Add  the whole garam masala, fry for 2 minutes.
  5. Drop cashews in it and add sliced onion, saute it for till it turns transparent pink.
  6. Add the ground green paste to it and stir till the raw smell leaves from it. Saute carrot and beans.
  7. Combine the mint and cilantro chops, fry for another 2 minutes.
  8. Now add the soaked rice without water and stir continuously till moisture dries off.
  9. Now add coconut milk, rice soaked water in the rice mix, stir for about 4 minutes.
  10. Add cooked green peas and orange juice, salt. Continue stirring for about 5 minutes.
  11. Add in the water used for soaking rice. Cook covered on slow flame for about 20-25 minutes or till you find pulao is ready with perfect consistency.
  12. Garnish with orange pulps and green peas.
  13. Serve this Orange Pulao with any curry and onion raita for lunch.

Note:
* You can also use electric cooker to prepare this recipe with same procedure.

* Use Juicy orange(for juice)  to get maximum fruit juice.

* Select orange which are meant for making juice, this will not have seeds in it.
