Vegan Avocado Sandwich Recipe under 15 minutes - ezcookbook


Avocado sandwich is as simple as to make under 15 minutes. You no need any pre-preparation and just need to toss up all the ingredient. Club between the bread slices and toast it. Sandwich is ready to relish with glass of fresh juice. Bachelors, home-alone guys can give a try to this exotic sandwich. What need more for a healthy weekday breakfast.

Tip to choose Avocado:

1. Bright Green - Fresh shiny,firm not yet ripe avocado.
2. Dark Green - little hard, semi ripe .
3. Purplish black or green - soft when hold in the palm, fully ripen, ready to use.

Avocado is a tropical fruit with some unique taste and texture. You should know the purpose of use, before you purchase. But still you can buy the firm one and ripe at home.
Avocado may tends to discoloration, always use or cut as needed or wrap in cling-film to avoid discoloration.

Preparation & Cooking Time : 15 Minutes

Yield :4 Sandwich

Ingredients:

Avocado - 1 ripen
Onion - 1 medium
Tomato - 1 medium
Salt to taste
Pepper powder to taste
Olive oil - 1tbsp
Whole meal bread slices - 8
Ghee / Butter for toast

Method:

Roughly chop onion, tomato. Halve the avocado, remove the pith and scoop out the pulp and chop to small cubes or mash with fork. 
In a mixing bowl add onion,tomato, avocado, olive oil, salt and pepper. Toss to combine. 

Heat a fry pan or dosa tava. Spread some butter / ghee and place two bread slices. Toast both sides until golden. Sandwich the slices with a tbsp of avocado spread. 
Place a flat tray or heavy box over it to set the sandwich. Divide the sandwich diagonally using knife or pizza cutter. Serve hot.


Note:

You can incorporate juice of lemon to the sandwich to add zing.
Add some salad veggie like lettuce, capsicum, cucumber to make sandwich more delicious.
