Baked Spinach Falafel | Spinach Falafel Sandwich with Tzatziki Sauce




Falafel a world famous and versatile Mediterranean food. It can be served as a appetizer or with main course too. Here I tried to give it a green and healthy twist by adding spinach in it and baked it instead of traditional way of deep frying. It came out extremely delicious and crispy. I served it as a sandwich with pita bread along with tzatziki sauce which was the extra ordinary combination and a HIT in my family. Here comes the recipe to make baked spinach falafel.



Preparation & Cooking Time : 45 mins

YIELD : 16-18 falafels

Ingredients:

Cooked chickpeas - 2 cups
Fresh Spinach - 2 cups roughly chopped
Parsley - 1/2 cup
Onion - 1 big roughly chopped
Garlic - 3-4 cloves ( 1 tbs)
Olive oil - 2 tbsp.
Salt as per taste
Pepper as per taste
Lemon Juice - 1 tbsp.
Green chili - 1 no. roughly chopped (adjust your spice level. I choose less spicy one)
Quick cooking oats - 1/2 cup

Method:

  1. Place all ingredients in a food processor except oats.
  2. Pulse it until you get a coarse sand consistency of the mixture.
  3. Transfer the mixture in a large mixing bowl. taste and adjust spices/salt/pepper.
  4. Preheat oven at 350 degree F. Prepare baking tray lined with baking paper.
  5. Meanwhile fold in oat with above mixture and combine well.
  6. Take a scoop (approx. 2/3 tbsp.) of falafel mixture and give it a round ball or oval shape.  
  7. Place all falafels in prepared baking tray making sure to keep it 1" apart from each other for even baking.
  8. Bake them for 15-20 minutes and turn them around and bake again for 10 minutes.
  9. Broil/Grill them for 5-7 more minutes to get more crispy falafels if serving as a appetizer.
  10. Allow them to cool for 10 minutes.
  11. Spinach Falafel is ready to serve as a appetizer/starter with hummus/tahini/Tzatziki dip.
  12. To Serve in a main course as a completely meal, make falafel sandwich or falafel wrap. I made Falafel Sandwich with tzatziki sauce.
  13. To make sandwich, cut pita bread in half and open edges of bread. stuff in 2 falafels, lettuce, tomato, onion, and your favourite sauce/dip. 
  14. To make a wrap, place a tortilla in plate, in middle of tortilla place lettuce, 3 falafels, add tomatoes, onions and favourite sauce/dip and sprinkle salt and pepper. close the wrap and serve healthy falafel wrap.

Note:

  • Make sure chickpeas and spinach are drained well and dry enough before pulse them in processor to get proper consistency. If they will be wet the mixture will also become wet and leave more water after mixing it
  • Remember mixture should be coarse like beach sand consistency.
  • Instead of baking you can deep fry falafel and indulge in authentic crispy Mediterranean delight.
