Vada Pav | Mumbai Vada Paav Recipe - Ezcookbook

A Spicy Indian Vegetarian Burger.


Vada Pav or Wada Paav , a popular Indian Spicy Vegetarian Burger. A very hot selling Mumbai-Maharastra, street food, a quick food for rushing weekdays. Pav is actually a bun and vada is basically a batata vada. Batata vada is made out of spiced potato balls coated with besan batter and deep fried. The vada is then clubbed between the pav with some fresh and hot spicy chutneys.
Though the recipe itself calls for more recipes in it. The final yield will be very delightful and tasty.  Once you are ready with all three chutneys  and vada, the assembling of vada pav is so simple and makes you to mouth water instantly.

                    Ingredients you need is 


Preparation & Cooking Time : 60 minutes

YIELD : 8 Vada Pav

Ingredients:

For the vada:
Potato - 2 large
Ginger Paste - 1/2 tsp
Garlic Paste - 1/2 tsp
Green Chilli Paste - 1/2 tsp
Garam Masala - 1 tsp
Coriander leaves - 1 tbsp, chopped
Lemon Juice - 1 Tbsp
Salt To Taste
Oil for deep fry

For the Batter:
Besan / Chick pea Flour - 3/4 cup
Turmeric Powder a Pinch
Asafoetida - 1/4 tsp
Water as needed for batter
Oil - 1 tsp
Salt To Taste

For Serving Vada Pav:
Pav Bun -  8
Green Chutney, as required
Dates Tamarind Chutney, as required
Red Garlic Chutney, as required

Method:

Procedure For Batata Vada:
  1. Boil the potatoes, cool, peel the outer skin and mash well.
  2. Heat oil in a fry pan. Add Mustard and as the seed cracks throw in the mashed potato, ginger, garlic and green chilli paste,garam masala,. Add needed salt and mix well. Cook for 2 minutes. Garnish with coriander leaves and squeeze lemon juice. Mix well.
  3. Cool the mixture and divide into 8 gooseberry sized balls and keep aside.
  4. For the outer coating: Sift one cup of besan in a bowl, add salt , asafoetida, oil and water as needed to make a thick batter. (Batter should not be very runny).
  5. Heat sufficient oil in a kadai for deep fry. Coat the potato balls in the batter and deep fry in the hot oil until golden brown on both sides.
  6. Drain to kitchen tissues and keep aside.
For Sweet/Dates-Tamarind Chutney:
Gring together a cup of de-seeded dates, tbsp of tamarind paste, tsp of ground cumin, tsp of chilli powder, tbsp of tomato ketchup, with salt and  water as needed.

For Assembly of Vada Pav:
  1. Get ready with Meetha  / dates-tamarind  chutney, Hara dhaniya / green chutney, Teeka / red garlic chutney, small pav buns and batata vada.
  2. Slice the pav bun into half, apply green chutney on one side and dates-tamarind chutney on the other side, club the batata vada between with teeka chutney powder.
  3. Serve immediately with fried green chilli. Enjoy as many you want.....

Note: 

  • Batata vada can be shallow fried using Paniyaram or Appey pan to avoid excessive oil intake.
  • If you don't get Pav bun, make use of butter bun / burger bun or as available (as I did).
  • Prepare all three chutneys in advance, prior a day to make recipe without fuss.
