Hot Garlic Chilli BabyCorn Recipe - Ezcookbook


Here comes with an exotic Indo-chinese recipe. I have been wanting to try this dish for longtime and last weekend I got an opportunity to prepare this for lunch with fried rice. The outcome of the dish wow great, got very good comment from my hubby. The combination of baby corn with capsicum gave an appealing look with rich glossy hot sauce and I felt like posting rite immediately this week. Preparation & Cooking Time: 25-30 minutes

YIELD :2 Servings

Ingredients:

Baby Corn - 6-7 tender pieces
Capsicum-1/2 cup 1" diced(use red, green and yellow)
Onion-1 Medium slice lengthwise
Garlic-1 tbsp,crushed
Corn Flour-1 tbsp
Water - 5 tbsp
Tomato ketchup- 2 tbsp
Garlic Chili Sauce -1 1/2 tsp
Sesame oil-1 tbsp
Salt for taste
Oil for deep fry

Method:

  1. Wash and cut diagonally the baby corn. Dust the baby corn with Corn flour. Heat 1/4 cup of oil in a fry pan and fry the baby corn until golden crisp. Drain to kitchen tissue.
  2. Heat a saucepan add sesame oil, crushed garlic, onion and saute well until turns light brown.
  3. Add tri-color capsicum and saute for few minutes till soft. Throw in the garlic chili sauce, tomato ketchup and salt. Saute for 2-3 minutes. The vegetables should be crunchy in the recipe not full cooked.
  4. Pour in a cup of water/vegetable stock and bring to boil.
  5. Now dilute a tbsp of corn flour with 5 tbsp of water and pour to the cooking vegetable sauce.
  6. Check the consistency of the gravy and add water if it looks very thick.
  7. Finally add the fried baby corn and cook for further two minutes.
  8. Garnish with spring onion green and serve hot with fried rice.
Note:
  • The recipe should be served hot immeditely, as all Indo-chinese recipes will taste delicious to have right immediately after cooking.
  • Prepare the garlic chilli sauce prior a day and will be easy to use for the recipe.
  • Fry the baby corn will less oil as needed, as you cannot reuse it again.
