Rava Kesari | Sooji Ka Halwa | How to make Rawa kesari

Today we wish to share one of the most popular and easy to make Indian sweet - Rava Kesari.
Every year we try to post some unique recipe that symbolize our National Flag Colors. This year we would like to post sweet with tri colors.

Whenever we feel like to celebrate, amma use to make this sweet instantly, that's the specialty of this sweet. Even newbie to cooking will love to learn this basic sweet recipe. And this is suppose to be my first sweet attempt when I was in school, not bad came out well. Enjoy making this Rava Kesari/Sooji Halwa in tri color, as I did here today to show your patriotism.

Preparation & Cooking Time : 20 minutes

YIELD : 4 servings

Ingredients:

Rava / semolina - 1 cup
White Sugar - 1 cup
Water - 2.5 cups
Saffron strands - 1/2 tsp (soak in 3 tbsp of warm milk for 5 minutes)
Orange food color - 1 tsp(optional)
Green food color - 1 tsp(optional)
Ghee - 2tbsp + 1tbsp to roast the nuts
One fistful of Cashewnuts , Pitachios, Raisins

Method:

  1. Heat ghee in a pan and roast the nuts  to golden and transfer to the bowl. In the same pan roast rava until aromatic and switch of when it starts to turn light golden. Transfer to the plate and let it cool.
  2. Heat a heavy bottom vessel with 3 cups of water and bring to boil. When it starts bubbling, add the roasted rava (also add food color which you want ) and stir until moisture gets evaporated. Carefully do this step as rava tends to form lumps, so pour rava steadily from certain distance to the pan. (TIP:Use egg whisk to combine without forming any lumps). Do It in a medium flame or low flame if you are doing for the first time.
  3. Once rava is cooked, add sugar and stir to dissolve. Cook till forms a big lump. Add 2 tbsp of desi ghee at this stage and cook for further few minutes to get glossy non sticky texture. Add more ghee if you are not that diet conscious.
  4. Add saffron milk, garnish with ghee roasted nuts at the end. Rava kesari is ready to enjoy.
  5. To make Orange Kesari, add  a teaspoon of orange food color at the time of adding rava STEP 2 . And to make Green Kesari, add  a teaspoon of green  food color at the time of adding rava STEP 2 .
  6. Adding food colors to kesari is optional and its upto individuals taste preference.
  7. Kesari stays good for 2-3 days in refrigerator.
Serving Tips:
  • Mould the kesari in a greased bowl or grease the laddle with ghee before serving, to get an appetizing look.
  • Pour the kesari in a ghee greased tray and cut into diamond shape and serve.

Note:

  • For variation, use milk in place of water or use equal proportions. If you like cardamom flavor, add a pinch of it to enhance the taste to kesari.
  • If in case kesari tends to form small lumps around, don't be panic. You can easily break it once cooked well.
  • Try adding chunks of fresh fruits like apple, pineapple, mango to make delicious fruit kesari.
  • Aslo can make a puree of any fruit, add it to the kesari, it gives natural fruit color to the kesari.(Do not add food color)
