Bread Potato Bonda | How to Make Bonda With Less Oil

Bonda made of spiced potato filling in bread and fried using less oil.

Hi all, today's post is about Bonda - one of the popular south Indian snack, typically deep fried are delicious served with coconut chutney. How about the recipe picture here? does it looks like deep fried? If you say yes, not at all. I simply fried it using paniyaram pan. I am sure, it takes less than a tsp of oil to fry each bonda.

This spicy mashed potatoes is gently flavoured with chilli powder, garam masala and coriander powder. Makes small balls of equal sized, out of the mixture and fold in carefully over bread slices then fry using paniyaram pan. This is a healthy replacement for deep fried bonda, but tastes exactly same as fried food.

Preparation & Cooking Time : 40 - 45 Minutes

YIELD : 10 bondas

Ingredients:

Bread Slice - 10
Potato - 2 large
Green Peas, fresh/frozen - 2 tbsp
Red Chilli Powder - 1/2 tsp(or 1 tsp)
Coriander / Dhania Powder - 1/2 tsp
Garam Masala - 1/2 tsp
Coriander Leaves few chopped
Turmeric Powder a Pinch
Asafoetida - 1/4 tsp
Salt To Taste
Oil for frying

Method:

  1. Wash and boil the potatoes in sufficient water. Peel and mash the boiled potatoes.
  2. In mixing boil combine potato, green peas, chilli powder, garam masala, turmeric, asafoetida and some salt to taste. Gently mix and throw in the chopped coriander leaves that gives an appealing taste. Make small gooseberry size balls out of the mixture. Keep aside.
  3. Now trim the edges of the bread slices. Flatten each slice using rolling pin.  Sprinkle some water and place the potato ball in each slice and fold the edges together to give a good shape(like ladoo).
  4. Heat a paniyaram pan drizzle some oil in each hole and drop the balls (one per hole). Cook both the sides until it turns out golden crisp. Add oil as needed to make it crispy.
  5. Dish out and serve hot with coconut chutney.

Note:

  • If you don't have paniyaram pan either shallow fry or bake it.
  • Serve the bondas immediatedly to enjoy the crispiness as it is not deep fried.
  • Place the potato mixture in microwave oven for 1-2 minutes (high mode), to eliminate raw flavour of spices  (before STEP 3).
  • Use water to fold the bread slices  tightly to hold the mixture.
