Stuffed Karela/Bitter Gourd with Gravy | Bharwan Karela

Karela/Bitter Gourd stuffed with besan & spices and cooked in tangy tomato gravy.


 Karela or Bitter gourd is very well known for its bitterness in its taste and hence people usually keep away from this vegetable. But Bitter gourds are very low in calories but dense with precious nutrients. It is an excellent source of vitamins B1, B2, and B3, C, magnesium, folic acid, zinc, phosphorus, manganese, and has high dietary fiber. It is rich in iron, contains twice the beta-carotene of broccoli, twice the calcium of spinach, and twice the potassium of a banana.

When it is stuffed and cooked with Besan / Gram flour with specially chosen sweet and sour  spices the dish will give us double nutrients and flavours too. Follow this recipe to prepare  stuffed Karela/Bitter Gourd with Gravy and believe me you will not feel any bitterness in them and will surely like its taste.

 

YIELD :2-3 persons

Ingredients:


Main Ingredient - 
Karela/Bitter Gourd - 6 nos. (small Size)


Stuffing:
Besan - 1 cup
Jaggery - 2 tbsp grated
Kasuri methi - 1 tsp
Amchur Powder - 1/2 tsp
Garam Masala - 1 tsp
Salt as per taste
Chili powder - 1 tsp
Lemon juice - 1 tsp
Hing a pinch
Oil - 2 tbsp

Gravy:
Oil - 2 tbsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Onion - 1 big finely chopped
Ginger garlic paste - 1 tbsp
Tomato - 1 big finely chopped
Above stuffing - 1 tbsp
Salt as per taste 
 

Method:

  1. Discard the skin bitter gourd, wash and clean them. Make a slit and carefully remove the seeds.
  2. Steam boil them for 5-6 minutes. Make sure it should  be only half cooked and NOT over cooked. Once cooked keep it aside.
  3. In a bowl combine all the ingredients mentioned for stuffing, mix them well and prepare a dry mixture to stuff the bitter gourd. Keep 1/4 of stuffing aside for gravy.
  4.  Stuff all the karela with stuffing mixture one by one and stir fry in a pan on medium heat for 7-8 minutes.   
  5. Heat the oil in a pan, add mustard and cumin seeds. Add chopped onion and ginger garlic paste. Saute for 2 minutes.
  6. Add tomato and cook again ntill tomatoes are cooked and tender. add remaining stuffing and 1/4 of water. Mix it and cook unitll a nice thick gravy prepared.
  7. Once get proper consistancy of gravy, add stuffed, cooked bitter gourd. Toss them well and cook for few more minutes. 
  8. Serve hot with roti/paratha or rice.
