Methi Kadhi / Fenugreek Yogurt Soup

Indian Yogurt Soup made using besan and Fresh Fenugreek Leaves 

 
Kadhi or Indian Yougurt Soup has many variety and flavors using different ingredients. Any form of kadhi is my favorite. among them this Methi Kadhi is very healthy and delicious as it gives unique flavors and nutrients of Fresh Fenugreek leaves. Try this easy Recipe to make Methi Kadhi / Fenugreek Yogurt Soup.

YIELD : 2 persons

Ingredients:

Yougurt/Curd - 1 cup
Besan - 2 tsp
Salt as per taste
Sugar - 1/2 tsp
Turmeric Powder - 1 tsp
Chili Powder - 1 tsp
Ginger garlic - 1 tbsp grated


Seasoning:
Oil -  1 tbsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Hing a pinch
Ginger garlic - 1 tbsp grated 
Fresh Methi leaves - 1 cup washed finely chopped

Method

    1. Blend the curd and besan in a bowl. Add 2-3 cups of water into it.
    2. Heat the above prepared liquid in a sauce pan and add salt, chili powder, turmeric powder, and sugar. Cook for 5-7 minutes.
    3. In other pan heat the oil and add mustard seeds and cumin seeds along with hing. Once they stop fluttering add ginger garlic and chopped methi in it. saute for 4-5 minutes. Add this seasoning into above prepared kadhi. 
    4. Cook for few minutes until you get desired consistency.
    5. Serve hot with Plain Khichdi/ Rice/ Roti.
     

Note:

Methi Kadhi normally served with rice/roti/khichdi. But for a change I prepared baked macaroni using this methi kadhi and It came out absolutely delicious. Recipe for Macaroni with Methi Kadhi coming soon. Stay Tuned!!!
