Microwave Carrot Cup Cakes ~ Cake Under 2 minutes


Carrot cake - a soft and spongy cake under 2 minutes.


This is almost a quick time treat when you crave to eat some cake. And you know this hardly takes only 2 minutes to get done like Maggi Noodles. Originally I adapted the recipe from here. With few changes I modified the recipe up on my convenience. The addition of carrot makes it really taste yum with the nutty bites. The raisins almost accompanied in every spoon of bite. Try this soft carrot cake to relish your taste buds.

YIELD : 4 servings

Ingredients:

Grated Carrot - 3/4 cup
All purpose flour - 3/4 cup
Egg - 1 Large or ENER - G egg replacer - 1 1/2 tsp
Oil - 1/4 cup
Baking Powder - 1/2 tsp
Sugar - 1/4 cup( add a tbsp more if use have sweet tooth)
Salt - 1/4 tsp
Ground Cinnamom - 1 tsp
Groung Nutmeg - 1/4 tsp
Golden raisins - 2 tbsp
Crushed Cashew nuts - 2 tbsp


                    

Method:

Toss the grated carrot in a fry pan for 2 minutes, to eliminate raw smell.

In a mixing bowl, combine oil, egg and sugar. Stir until sugar dissolves completely. Add flour, baking powder, salt, ground nutmeg and cinnamon. Mix until smooth.  

Now add in the carrot mixture, raisins, cashew nuts and again give a good mix. 

                      

Divide the mixture among four equal cups( I used tea cups) and microwave one at a time for  2 minutes.( mine done under minute and half, check the timing with the first cup cake and gradually increase time for the next cups)

                                                    

Sprinkle some confectioner's sugar and serve warm.

Note:

  • If you wish can add some fresh fruit chunks, to add more taste or some tutti fruity.
  • Use 1 1/2 tsp of ENER -G egg replacer( mix with 2 tbsp of water) for egg substitute.
  • The cooking time may vary depends up on the cup size and quantity you pour, smaller cups may take only minute or minute and half.

usually i have used curd as egg replacer hope it works
