Pomegranate Rice | Easy Fruit Rice Recipe

  Sweet and spicy fruit rice.
                    

Fruits are not only meant to be eaten raw but can also be cooked in many ways to consume. One of the most powerful red fruit with its anti-oxidants. It is one of the best fruit where the juice is as beneficial as the fruit or seeds. Lower the blood pressure, cholesterol and other cardiac risk factors. It lower the risk of cancer and heart attack. 

A thick juice is extract from pomegranate seeds and a sauce is prepared  with other spices by simmering the juice. The steamed rice is then added to the sauce, cooked further for few minutes and the yummy Pomegranate Rice is ready to serve with raita.  I learned this recipe from my MIL. I recommend this recipe to try especially with kids. The taste of this rice variety will be of mild sweet and spicy. Try this rice for lunch and send us feedback.

                         


Preparartion & Cooking Time: 25 Minutes

YIELD :2 Servings

Ingredients:

Steamed Rice -1 1/2 cup
Pomegranate Fruit-1 Large
Onion -1 medium slice lengthwise
Red Chilli Powder -1/2 tsp
Garam Masala Powder - 1/2 tsp
Turmeric Powder A Pinch
Green Chilli -3 slit lengthwise
Broken Red Chilli - 2-3 no
Curry Leaves - 2 springs
Coriander leaves-1 tsp chopped
Ghee / Oil-1 tbsp
Salt-11/2 tsp

Method:

  1. Scoop out the seeds from the pomegranate shell and extract juice using mixer or juicer. Pass to strainer to discard seeds, if any present.(do not use water). Reserve few seeds for garnishing.
  2. Heat a fry pan add ghee, mustard and wait till it starts to splutter. Add cumin seeds, broken chillies, onion and saute well.
  3. Add  pomegranate juice, red chili powder, turmeric powder, salt and stir till comes as a thick sauce. Add curry leaves.
  4. Stir in the rice and saute well to blend with sauce. Sprinkle the garammasala powder at this stage.
  5. Garnish with coriander leaves, pomegranate seeds.Serve with Chilled cucumber raita.
                     

Note:

Adjust spice according to your taste.
Garnish with grated cheddar cheese for kids.

No way of bitter. ... Becoz I use to try this recipe once in every month...never ever felt bitter....can try this on ur own

Hi veena, unless i add pomegranate seedsfor garnish, no one can find its a fruit rice.... Becoz it tastes spicy with very mild sweetness since i added many spice ingrn.....its more lik variety rice recipe...
