Honey Roasted Veggie Salad is a perfect recipe for health and fitness conscious people like me, who are always in a search of healthy and balanced nutritious recipes. Go green and calaricious after having all fatty food in festive season. Try this healthy recipe of Honey Roasted Veggie Salad.

  
YIELD – 2 servings

Ingredients:

Olive oil - 1 tbsp
Pumpkin - 1 cup (cut in cubes)
Red and Green capsicum - 1 cup (cut in cubes)
Avacado - 1 small (Cut in cubes)
Zuchini - 1/2 (cut in cubes)
Shallot - 5-8 nos.
Tofu - 8-10 cubes
Sunflower seeds - 1 tbsp

For Dressing :
Salt as per taste
Pepper powder - as per taste
Oregano - 1 tsp
Honey - 1 tsp
Tabasco sauce - 1/2 tsp
Lemon juice - 1 tsp (As per taste)
Spring onion, Tomato slices and Lettuce for Garnishing 

Honey Roasted Veggie Salad
 Method:
  1. In a large mixing bowl mix all the veggies with tofu and sunflower seeds
  2. In a small bowl mix all the ingredients for the dressing. mix well.
  3. Add dressing in the veggie and toss them well.
  4. Heat the grill pan and spray olive oil allover in it.
  5. Add all the veggies in a grill pan. 
  6. Cook them well until both sides are nicely charred and the vegetables are just tender.
  7. Once cooked well turn off the grill and sprinkle spring onion. Healthy salad is ready to serve.
  8. In a serving plate place the lettuce leaves and serve hot salad with tomato and lemon slices.

Note:

You can also roast veggie in oven or in barbeque pit.
Mix and match your favorite veggies.
Serve it just like a salad or wrap it in a tortilla to make a complete meal.
