Chocolate Chip Cookies - Christmas Special


Make great cookies with simple ingredients using chocolate chips and I am sure your family will love this irresistible cookies. This rich and buttery tasting chocolate cookies combines the subtle flavour with rich chocolate chips. Make these delicious cookies for chirstmas and treat your family.



 Preparation & Cooking Time : 30 minutes

Yield :30 cookies

Ingredients:

All Purpose Flour - 1 1/2 cups
Chocolate Chips - 3/4 cup
Baking Powder - 1tsp
Vanille Essence - 1 tsp
Egg - 1
Sugar - 1/2 Cup
Butter - 3/8 cup (90 g)
Salt a pinch

Method:

In a bowl, cream in the butter, softened at room temperature with the sugar, then incorporate vanilla essence,egg and a pinch of salt. 


Sift the flour, baking powder and add to the butter mixture. Knead with hands to form a stiff and smooth dough. Finally add in the choco chipes and combine well. 




On a floured surface roll the dough and give a desired shape using cookie cutter. Line in two baking trays with parchment paper and arrnge in the cookies with 2cm apart each. 


Bake in the pre-heated oven, swapping halfway through cooking for about 15 minutes or until firm to touch. Cool the cookies in the wire rack completedly before storing.



Note:

You can refrigerate the cookies dough in a ziplock and  bake as needed. It will stay good for many days.

Homestyle Spicy Thick Tomato Soup

Making your own comfortable tomato soup is healthy, nutritious, filling and so easy .

  
Soups are great appetizers which enhance one's appetite. Thats why it is served prior before meal and refreshes the soul with the very first slurp. Soup an be usually made with any combination of vegetables or meat, thick or thin, spicy or mid. This tomato soup is completedly home style and spicy which I learned from my Amma. Here I didnt add any thickening agent like corn starch but added small amount of carrot that adds appealing color to the soup and add on flavor too. 



Preparation & Cooking Time :30 minutes

Yield : 4 bowls

Ingredients:

Tomato - 4 large
Onion - 1 small or medium
Garlic - 4 pods
Carrot - 1 small or half of one large
Pepper corns - 6no.
Cumin seeds - 1 tsp
Turmeric Powder - 1/2 tsp
Red chilli - 1
Corinader - 1 tbsp finely chopped
Salt To Taste
Butter /Oil - 1tbsp
Butter Croutons to serve

Method:

  1. Roughly chop the tomato, onion, carrot and peel the garlic. Pressure cook chopped veggie with 2 cups of water, pepper corn, turmeric, red chilli, cumin and salt. Cook for 3 whistle or until soft.
  2. Wait till pressure gets released. Cool the mixture completely, grind to smooth paste and pass to strainer, extract the soup.
  3. Pour the soup in a sauce pan and bring to boil again. Pour some more water if it too thick. Cook until bubbles up and garnish with coriander leaves.
  4. Season with salt and pepper as needed. Serve topped with bread croutons.

Note:

  • You can either use rice flour or corn flour, dilute in water,add to the boiling soup at the end to thicken it. Its optional.
  • Adding carrot to the soup helps to thicken and also gives nice appitizing color to soup.

Pappu Saaru | Paruppu Rasam - Bachelors Recipe


Rasam, a very simple recipe but yet addictive, tasty, tangy, spicy. When served with rice its divine and very appetizing. This simple most trending south Indian style rasam recipe is common at every home. Today will share this recipe for newbie and bachelors who loves to cook simple home style recipes from scratch. This is the base for many rasam variations and yes without rasam powder their is no more heart in rasam. Slurpy rasam is my ATF and this flavourful recipe helps to improve the digestion.

Preparation & Cooking Time : 15 minutes + lentil cooking time

Yield : 4 servings

Ingredients:

Kandipappu/Thuvaram Paruppu/ Red Lentil  - 2 tbsp
Water - 3 cups
Tamarind - small goosebeery size ball
Turmeric Powder -1/2 tsp
Tomato - 1 medium chopped
Garlic - 3 pods, crushed
Jaggery / Sugar - 1 tsp
Gingelly oil - 1tsp
Salt to taste

For Seasoning:
Oil /ghee - 2 tsp
Asefotida - 1tsp
Mustard - 1tsp
Cumin - 1 tsp
Red Chilli - 2 brokon

For Garnish:
Curry leaves
Coriander leaves

Method:


Pressure cook the pappu with 1/4 cup of water, tsp of gingelly oil, turmeric powder until soft and mushy. 

Meanwhile in a saucepan or in vessel add, tamarind, tomato,garlic, turmeric powder, rasam powder, jaggery, required salt with 3 cups of water. Stir to combine. 

Add the well cooked and mashed pappu/daal to the rasam mix. Place it in the stove and let to cook in medium flame until begans to frothy. At that time add chopped coriander and curry leaves. Switch off the flame and cover with lid. 

Prepare seasoning, heat 2 tsp of oil, add mustard , cumin, red chilli, asefotida. Wait until it splutter and pour to the rasam. 

Serve the rasam with plain rice and papad.

Note:

  • For variation , if you don't have rasam powder, crush a tsp of coriander, pepper corn, cumin with red chilli and add to the rasam.
  • You can make this rasam without pappu too and its upto your choice.

Paneer Tikka Kathi Rolls | Frankie Recipe


Paneer Roll or Wrap or Frankie; name it whatever you like. Paneer Tikka Kathi Roll is a very popular street food which is most healthy consumed in India. Make it fresh from scratch or reuse leftover paneer tikka kebab and wrap in homemade tortillas or Roti for quick and easy version. Pack in your kids lunchbox or prepare in dinner; It is easy to make as well as healthy and delicious! Check out below recipe to make Paneer Tikka Kathi Roll...

Preparation Time : 40 minutes

Cooking Time : 20 minutes

Yield : 6 rolls

Ingredients:

Paneer Tikka:
Paneer cubes - 1 cup
Green capsicum - 1/2 cup cubed
Onion - 1 cubed
Hung curd - 1/2 cup
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Garam masala - 1 tsp
Ginger garlic paste 1 tsp
Salt as per taste
Kauri methi 1 tsp
Amchur (Dry mango) powder 1 tsp
Butter or oil for brushing

For Roti:
Wheat Flour - 1 cup
Salt as per taste
Oil - 1 tbsp.
Cumin seeds - 1 tsp
Butter for frying rotis

For Rolls:
Lettuce - 1/2 cup finely chopped
Onion - 1 medium size cut inot long thin stripes
Green Chutney - 6 tsp (I used tomato ketchup for my son)

Method:

  1. For Paneer Tikka : In a Large mixing bowl mix all ingredients hung curd, Chilli powder, Coriander powder, Garam masala, Ginger garlic paste, salt, kasuri methi, Amchur (Dry mango) powder and prepare marination paste.
  2. Mix well and add fresh paneer cubes, onions and cubed capsicum. Mix well to coat them well with paste. Keep it in refrigerator for half n hour for marination.
  3. Spread all cubes in a aluminium foil and brush with butter or oil.
  4. Broil in a preheated oven for 15 mins or until they start to get brown spots on edges. Alternatively you can also grill them in skewers or shallow fry them in pan.
  5. For Rotis : In a mixing bowl, combine all ingredients mentioned for roti except butter. Mix well and prepare a smooth dough. Keep it aside and give it rest for 10 minutes.
  6. Divide dough into 6 balls, take one ball, dust it in dry flour and roll out into a thick roti (thickness of 1 $ coin).
  7. Cook it on hot griddle and grease with butter. Cook both sides evenly until brown spots appear.
  8. Repeat the process and prepare all rotis.
  9. Proceed to make Rolls : Place one roti on a working surface and spread one 1 tsp of green chutney. Sprinkle salad leaves/lettuce and onions. Finally in the middle of roti place prepared paneer tikka on it.
  10. Very carefully wrap up the roti and make a tight roll. Use toothpick to close the edges. or wrap them in aluminium foil. 
  11. Paneer tikka kathi roll is ready to serve.

Vegan Banana Walnut Bread


Baking a bread vegan style in quite interesting and very affordable to bake at home. This recipe is easy and fool proof. A great bread recipe to try for bakers at beginning level. Ingredients:

All Purpose Flour - 1 cup
Banana - 3 medium mashed
Baking Powder - 1 tbsp
Sunflower oil - 75 grams
Walnuts - 1/4 cup
Brown Sugar - 1/2 cup

Method:

  1. Mash the peeled banana with a fork. Mix well with sugar and oil.
  2. Sieve the all purpose flour, baking powder and combine with the banana. Finally add the chopped walnuts and combine. 
  3. Preheat the oven at 200°C. Line in the 2 lb loaf  pan with non stick baking sheet and pour in the bread batter. Tap on counter top to spread evenly. Top it up with some walnuts(optional). Bake the bread for 60 minutes. After 25-30 minutes of baking process check the bread and cover with foil if it starts over browning.
  4. Allow to cool in a wire rack completely before slicing. It stays good for 3-4 days. 

Note:

  • Cover the bread with foil after 25 minutes, if it starts turn darken brown.
  • For variations add raisins and more nuts as per your choice.
  • You can even substitute APF with self-raising flour and reduce baking soda to 2 tsp.

Instant Oats Dosa | Easy Indian Oats Dosa




Making a healthy breakfast yet delicious is a great treat for tastbuds. Including oats in your diet is added advantage for healthy eating. This instant version of oats dosa makes you fall crave for it every time you make. For people who got boredom of eating regular oats porridge can alternate your menu to the tastiest oats dosa. The more crispiest and more tasty with or without the addition of yogurt. Dosa tastes perfect with mint chutney or even with some spicy chutney.
Mix all the dry ingredients and store in a air-tight container, mix water and other wet ingredients just before you need to prepare dosa. This greatly helps in time management ans useful tip for working people.

Preparation & Cooking Time: 30 minutes

YIELD : 8  Dosas

Ingredients:

Oats - 1 cup(I used quick cook oats)
Rava - 2 tbsp
Rice flour - 1/2 cup
Cumin seeds - 1 tsp.
Green chillies - 2no.
Onion - 1 medium
Yogurt - 1/4 cup (optional)
Water  as required
Salt  as per taste
Curry leaves - 1 tbsp finely chopped
Cashew nuts - 4-5 broken into small pieces
Oil as needed for  making dosa

Method:

  1. Chop Onions and green chillies finely. Combine the flour, rava, oats in a microwave bowl and roast in powder high for 1 minute or roast in a fry pan.
  2. To the roasted dosa mix. Add chopped onions, green chillies, cumin seeds, curry leaves, cashews, needed salt and mix well.
  3. Add yogurtand required water until the batter is thin like rava dosa batter. Set it aside for 10 minutes.
  4. Heat a non stick pan or cast iron pan and grease oil first, then pour a laddle of batter starting from the ends of the pan towards the center. Pour the batter about 2 inch above the pan to get lacy texture. Now you can fill  the gaps or holes appeared with batter. (Tip:Stir the batter every time before pouring to pan to avoid sedimantation of flour)
  5. Apply oil over the surface of dosa. Let it cook on medium flame, as it takes little longer time to cook unlike plain dosa. Flip the other side and cook for further a minute or more. 
  6. Serve hot with mint chutney or chutney of your choice.


Note:

  • Always mix  the batter before makins dosa to prevent the flour settling to the bottom of vessel.
  • Pour water as needed after making two or three, as the batter might become thicker. This process helps to make a thin and cripy dosa as ever.
  • Yogurt can be replaced with buttermilk and added to the batter. Roasting the dosa mix yields golden brown dosa. 
  • Store the dosa mix (dry ingredients) in an air-tight container and use as needed. Stays good for months.
  • You can also roast and grind oats to fine powder for making dosa.

  3. Add banana, apple, flaxseed, and milk in a blender.
  4. Blend it well. Add more milk if you like thin consistency.
  5. Yeah, it's super quick...Apple banana smoothie is ready to serve. 
  6. I garnished it with chocolate slivers!!!

Note:


  • For variation use any other fruit along with banana.
  • Also add  a tbsp of choco powder for added flavor.

Kandi Nooka Billa Kudumulu / Rice Dhal Patties

Preparation &Cooking Time: 60 minutes
Yield:  10-12 patties
Ingredients:
Raw Rice -1 cup
Thoor Dhal -1/2 cup
Cumin seeds -1 tsp
Curry leaves - 2 tbsp finely chopped
Water - 3 cups
Pepper corns -1/4 tsp crushed
Grated Coconut fresh or dry - 2 tbsp
Salt -1tsp
Oil as needed

Method:
  • Combine rice and dhal in a bowl,using food processor/mixie grind it to course powder, this will about 11/2 cups.
  • In a heavy bottom pan boil 3 cups of water,add tsp of oil,pepper crush and salt. Simmer the fire slowly pour in the rice dhal powder,don't stir let it cook for 5 minutes.
  • Now using ladle mix the powder well with water without lumps and cook again for 5 minutes.
  • Cool the mixture and pinch into medium lemon size balls, flatten between palm(if the mixture becomes too hard use water to loosen, as this will help to make patties even size).
  • Heat the griddle and grease oil. Place the prepared patties and apply oil over the surface(can place around 5-7 patties at a time on the griddle depends on the size you prepare). Cook covered on slow medium flame for about 5 minutes,to change slight golden brown. Flip it over another side and do apply oil again,uncover and cook for 5 minutes till golden brown.
  • Serve this Yummy delicious Rice Dhal patties with Onion Chutney.

Note:
  • Try to cook on slow medium flame, this will give crispy layer to the patties which tastes good.
  • You can even try with channa dal instead of thoor dhal for a varaition or both dhal in equal proportions too.
  • For variation can also do deep fry, but if you are health conscious avoid it.
