Pori Urundai | Puffed Rice Ladoo ~ Karthigai Deepam Special

 Healthy Snack made with rice puffs and jaggery syrup.


The most famous and healthy snack that is made in all south Indian homes is this pori urundai. This is probably famous all over world which is called in different names like puffed rice crackers(english),  murirmoa(bengali), murmuralu(borugulu) ladoo(telugu)....  This is one such easy recipe that is made with the combination of puffed rice and jaggery syrup with crunchy  and crispy texture to eat.

Puffed rice candy / brittle also made with sugar syrup and with nuts . My favorite snack and healthy too. This recipe bring back my childhood memories where we friends use to buy  a packet (12 balls) and share among us after school hours. These are sold at an affordable price which can be bought with pocket money. While munching all the way we use to chit chat. This is made especially during kaarthigai Deepam time(on the fullmoon day of karthigai maasam). Check out other recipes like Rava Paniyaram, Nei Appam.

YIELD –12 - 15 balls

Ingredients:

Puff Rice/ Pori- 5 cup
Jaggery- 1cup
Water- 1/2cup
CardamomPowder- 1/2tsp
Salt A pinch To enhance taste
Oil / Ghee To Grease Hands


Method:

  1. Dry roast Pori in iron skillet for a couple of minute to make it crisp.
  2. Melt Jaggary with measured water in a deep vessel or non stick pan. Once it is dissolved completely pass to strainer to remove impurities.
  3. Now again reheat the syrup to make it thicken. Watch and stir carefully once it start to foaming. Check constantly to get one string consistency. This will take probably 12-15 minutes. Keep a boil of water by the side to check the syrup consistency. 
  4. Drop a same amount of syrup in water bowl to test, if it retains shape without dissolving in water then it is ready. Turn off fire.
  5. Add half a teaspoon of cardamom powder, a pinch of salt, puffed rice and stir everything together. The syrup should blend completely with puffed rice. Give a stand by time of about 5 minutes to cool.
  6. Smear your hands with oil or ghee and start holding circular shape like a ball. Or keep water by the side and dip once a while to avoid stickiness on hands.
  7. If you find difficult to hold shape due to heat use gloves. Alternative you can spread the mixture in a greased tray. Press firmly and evenly. Cut into squares of crackers.
  8. Cool and store in air tight container.

Note:

  • The jaggery syrup must be of perfect consistency, if not sweet balls become sticky while eating.
  • Cool the balls completely  to retain its crispiness for long time before storing.
  • Once you start making shapes the mixture will start getting dry, so try to hold shapes fast as possible, otherwise need to reheat again.
