Instant Jalebi - Vijayadashami Special

Jalebi a crispy yellow sweet spirals dipped in sugar syrup...most popular Indian sweet prepared during festivals.......



Jalebi is  my DS's all time favourite sweet, I was planning to make it at home since long...Last week I saw this instant jalebi recipe on TV show and couldnt resist myself to make it at home.....I tried it for the first time and it came out so crispy and tasty though couldnt make proper shape..Learn how to make Instant Jalebi and read carefully tips given below recipe to avoid few common mistakes. Hope It will help you to make it better than me.

YIELD –10-12 jalebis

Ingredients:

For Jalebi Batter
All Purpose Flour - 1 cup
Besan - 2 tbsp
yeast - 1/2 tsp crumbled
Ghee - 1 tbsp
Yellow food color - 2-3 drops
Powder Sugar - 1 tbsp
Oil/Ghee - for frying

For Syrup
Sugar - 1/2 cup
water-1/2cup
Saffron - few strands
Yellow color - few drops
Lemon juice - 1/4 tsp
 

Method:

  1. Dissolve the yeast in 1 tbsp of water.
  2. Sieve the flour, besan and sugar powder in a bowl. 
  3. Add ghee and yeast solution in it. mix well.
  4. Add warm water to make a thick batter. Make sure no lumps remain. Consistency should be thick sticky same like vada batter.
  5. Keep aside for half and hour.
  6. Heat the 1/2 cup of water in sauce pan, add sugar in it and simmer it for 5 minutes. 
  7. Add saffron, food color and lemon juice. 
  8. Once the syrup gets 2 string consistency remove from the gas. Keep aside.
  9. Mix the batter properly and fill it in the ketchup bottle or piping bag.
  10. Now Heat the ghee/oil for frying jalebis.
  11. squeeze out the jalebis in hot oil in round spirals. 
  12. Deep fry untill golden brown both sides.
  13. Transfer them into warm sugar syrup.  Deep in for 20 seconds and take out immediately.
  14. Serve hot with Rabdi or simply enjoy them once cool down. 

Tips:


  • 1. Authentic jalebi preparation, batter needs to be fermented for atleast 24 hours. In that case yeast can be replaced with 3/4 cup thick yogurt and 1/4 cup baking soda.
  • 2. Batter consistency should always be thick and sticky like medu Vada. Else it can be scattered in oil while frying.
  • 3. While frying , oil should not be fume and very hot...

only sugar syrup consistency seems to stop me from making this. wud love to try this and hope yeast is friendly with me
