Tofu Eggplant Sandwich Toast

Sandwich is always an ultimate food and is the only food that goes well any kind of stuffing  whether it is vegetarian or non vegetarian filling. It is a perfect dish to have at any time when you feel hungry since it takes very less time to prepare. Sometimes when you  feel lazy to cook this is a best option to satisfy the tummy with yummy filling. I tried many varieties of sandwich preparation and still exploring. Here today I want to share my tried and tested new version of sandwich which resulted extremely with great taste. The combination of tofu and eggplant with flavor of Indian spice, it is then clubbed between butter spread bread to make sandwich. Try this out .... 


Tofu Eggplant Sandwich Toast

YIELD – 4 Servings

Ingredients:

Whole Wheat Bread/white bread- 8 slices
Tofu- 1 cup cut into small cubes
Onion-1medium chopped
Chinese Egg Plant(1) / Baby Brinjals(5)- chopped
Garam Masala-1tsp
Green chilli- 2-3 finely chopped
Pepper Powder-1/2 tsp
Turmeric Powder-1tsp
Salt To Taste
Butter as needed
Oil-2tbsp

Method:

  1. Heat oil in a wok, add onion little salt and saute till translucent.
  2. Add green chilli, turmeric, egg plant and saute for few minutes till soft.
  3. Combine tofu cubes. With potato masher pound the tofu blocks till they turn to crumble state. Stir the crumbly mixture until done with less water at the bottom.
  4. Season with  pepper powder, salt as per taste.
  5. Finally sprinkle garam masala and stir once before turn off.
  6. Apply butter on all bread slices. Club the stuffing between two breadslices.
  7. Place it  in the sandwich maker and toast till done with crisp soft golden brown 
  8. Serve this yummy sandwich with sauce and salad.

Note:

Try out the same procedure with Paneer and eggplant combination.
Adjust seasoning according to you and your family's taste.
