Snake Gourd Masala

Snake gourd masala is a simple south Indian dish made with  so called pudhalangai(tamil)/potlakaya(telugu). Like other gourds snake gourd is also very high in water content and has cooling effect on the body. A low calorie  veggie with less fat but filling and good for weight-loss diets. It has got high fiber content which helps to keep digestive tract healthy and good for diabetes too.

Snake Gourd Masala


Many varieties of spice masala are added to make curry/masala. Here I tried with very basic ingredients from my kitchen and it really tasted well. You can try this type cooking with other vegetables too. Cut the gourd and tendercook along with some onions, add all masala powder and salt. Granish with coconut and serve with rice. Don't it sound's so simple and yummy ....try out

YIELD –2-3 servings

Ingredients:

Snake guard/Pudhalangai- 2cups chopped
Onion- 1 medium finely chopped
Garlic -4 cloves chopped
Red chilli powder-1tsp
Coriander powder-11/2 tsp
Turmeric powder-1/2tsp
Cumin powder-1tsp
Sugar- 1/4 tsp
Grated Fresh Coconut-1tbsp
Salt To Taste
Oil- 1 tbsp

Method:

  1. Wash snake gourd and chop with peels accordingly.
  2. Heat oil in a skillet add seasoning one by one  mustard seeds, split urad dhal,curry leaves followed by garlic , onion. Saute till onion turns transparent  pink.
  3. Add in the chopped snake gourd and little salt with few drops of water sprinkled. Cook covered wth a lid on slow flame for 5-10 minutes or until veggies are done with soft and tender.
  4. Combine all masala powder mentioned in a small bowl and stir in the sauted veggie.
  5. Add required salt, sugar and stir well to blend  all masala powder with snake gourd. Cook uncovered for further few minutes till raw  smell of  masala vanish.
  6. Finally add in the grated coconut and mix once before turn off the fire.
  7. Serve hot Snake gourd / Pudhalankai masala with hot rice, dollop of ghee.
  8. This goes well with Chappati, phulka, Naan and rice.

Note:

Try to avoid adding water in excess while cooking rather stir once in every 2 minutes and sprinkle little amount of water if required. This will avoid snake gourd to become soggy.

Never tried snake gourd with masala. I am tempted. And there is snake gourd right now in the fridge that I thought would end up in a kootu. Maybe a change of plan is required.
