Mysore Pak

Mysore paks are a treat for any festival. My mom makes it for any occasion at home and I have wondered how she makes such mouth melting Mysore paks. I wanted to try it and the first time I tried it the taste was so good and real, but I got a semi solid sweet that didn't resemble the real mysore Pak in appearance. So I went back to  my mother and observed how she made it and it clicked the next time. As the saying Practice makes everything Perfect, this time I got a nice textured and tasteful Mysore Paks. You can also try this following the recipe given.

Mysore Pak

YIELD – 30 pieces (Depends on how big you cut)

Ingredients:

Gram Flour - 1 cup
Confectionary Sugar - 2 1/2 cups
Ghee - 2 1/2 cups
Water - 1 1/2 cups
 

Method:

  1. Sieve the gram flour through a wire mesh three times.
  2. Heat a heavy bottomed pan or a cooker.
  3. Combine sugar, water and let it dissolve and add in the pan.
  4. Once it dissolves add 1 cup of ghee and let it boil.
  5. Once it boils put the flame to medium and add gram flour little by little stirring continuosly.
  6. Once the whole gram flour is  added and it starts to thicken add the remaining ghee in batches, stirring continuosly.
  7. The main part in getting the proper consistency of the sweet lies here. The mixture should not bubble.
  8. If it starts to bubble don't let it bubble more add the the next batch of ghee.
  9. Continue this until all the ghee is over.
  10. Once it thickens transfer it to a plate greased with ghee.
  11. Once it cools down cut it to pieces.
  12. Mouth melting Mysore Paks are ready.

Note:

  • Do not let the besan mixture boil too much. If it bubbles so much then the Mysore paks will not be soft in texture.
  • Do not add the ghee before the mixture starts to boil.
  • Approximately add 1/2 tablespoon of ghee each time you add the ghee.
