Muttai Kuzhambu / Egg Gravy

If I dont find any vegetable at home to cook and have only eggs at home I make this muttai kuzhambu with some appalams and steamed rice. This recipe is one of the favorites of egg-terians.  It is also effortless in making. The recipe for such an easy kuzhambu is as follows.

Muttai Kuzhambu / Egg Gravy

YIELD – 3 SERVINGS

Ingredients:

Egg - 4
Shallots - 25
Fresh Coconut grated - 1 tbsp.
Cashew - 8
Poppy seeds - 1/4 tsp.
Cumin seeds - 1 tsp.
Coriander seeds - 2 tsp.
Dried chilli - 5
Salt - as per taste.
Oil - 2 tbsp.

Method:

  1. Peel and Chop the shallots finely.
  2. Grind the coconut, cashews, poppy seeds, cumin seeds, coriander seeds and dried chillies to a smooth paste.
  3. Heat oil in a pan and add the shallot.
  4. Fry until the shallots are translucent.
  5. Add the ground masala, salt and cook until first whistle.
  6. Once pressure releases, open the cooker.
  7. In a bowl beat one egg thoroughly and add this to the cooked gravy and mix thoroughly.
  8. Now switch on the stove put the cooker with the gravy on the flame.
  9. Crack and pour the other 3 eggs one by one into the gravy. (Make sure that you dont pour the eggs one over the other or two eggs dont combine together or merge by separating the eggs with a spoon)
  10. Close the cooker and cook. Turn off the stove at the stage before it whistles.
  11. Serve hot with steamed rice or rotis or Dosa.

Note:

  • You can also hard boil the eggs and slit it at the center and add it to the gravy.
  • You can substitute shallots with 2 small sized onions chopped for more easier version but the taste with shallots will be great.
