Modakam / Kozhukattai ~ Vinayakar Chaturti Special


Modakam / Kozhukattai is a sweet dish which originated in the India and it is considered to be the favorite dish of Lord Ganesha. It is being offered as Prasadam during Ganesh Chaturthi. It is being also referred as Kozhukattai(Tamil), Modak(Hindi), sweet rice dumplings(English) and popularly known as Momos in Chinese, Japanese, Tibetian style. Many varieties of kozhukattai are  made with stuffing like coconut - jaggery, sesame,cashew nut, peanut. Today's recipe is about kozhukattai with coconut-jaggery filling. This will be really super easy and super delicious recipe which provokes you to eat more with its melting taste.

YIELD – 9 Modakam

Ingredients:

Dough:
Rice Flour-1cup
Water-1 1/4 cup
Salt - 1/4 tsp
Oil- 2tsp + little for greasing

Filling:

Fresh Grated Coconut-1cup(without skin)
Grated Jaggery-3/4cup( Paagu Vellam - will  have no dust)
Ghee-1-2tbsp
Cardamom Powder a Pinch

Method For coconut jaggery Filling:


  1.  Heat  ghee in a pan add grated coconut and fry for few minutes.
  2.  Add the grated jaggery and stir well to blend with coconut. Cook it in a low flame until jaggery melts and mixture gets thicken. Dash a pinch of cardamom powder for flavor( or avoid if want). Turn of the flame. Do not over cook the mixture(as this will result very chewy like bubble gum). Alternative if you use normal jaggery dissolve it first with little water and strain it (to remove impurities). Now add it to coconut and mix well till thicken.
  3. While the mixture is still warm, apply ghee on the hand , take a small amount of it and make a ball. Repeat this step for all of the mixture and keep aside.
  4. Now lets learn procedure for outer covering preparation.

Method For Kozhukattai Dough:

  1. Sift one cup of rice flour and keep aside.
  2. Bring mentioned amount of water to boiling state with salt and oil added.
  3. Pour in the rice flour slowly, do not stir and half cover with a top. Let it cook on low flame for 10minute. Do not stir at any time in between. This process helps to form soft and smooth dough.
  4. After 10 minutes stir well with a wooden spatule until it forms a massive ball without any lumps like dough. Remove from the fire.

Method To Prapare Kozhukattai:

  1. Cool the dough for a while and while still warm start kneading to a smooth dough(wet hand with little water to tolerate the heat). Now smear hands with little oil to make  lemon size balls out of it.
  2. With the help of your thumb finger press the ball in center and start forming a cup shape out of it. Use oil to make proper shape without breaking the dough ball. Stuff in the prepared coconut jaggery filling.
  3. Now very slowly and gently bring the edges of the cup together over the top of the  filling, cover it  and pinch off excess dough. Shape it like horn. It will look like money pouch. (You can still use readily available Modak / Momos making moulds from market it you find difficult to make shape). Repeat this for all dough balls and stufffing balls to complete.
  4. Now steam cook the prepared kozhukattai for 10-15 minutes using steamer or Idli steamer.( Once done the outer dough skin will look transparent with jaggery filling).

Method 2 :

You can try another method of folding to prepare kozhukattai.Like shown in the below picture.
Take the dough ball flatten to thin roti between polyethin plastic or poori presser. Grease oil to plastic sheets before pressing the dough (this process helps to peel the pattern without stickiness).
Place the sweet stuffing on center and seel the edges  using little oil and if you are able shape the edges do like shown in the picture. Otherwise using pizza cutter roll over the edges to cover the stuffing completely. 
Steam cook for 10 minutes.


Note:

Traditionally raw rice is washed, dried and fine powdered in flour mill. It is then used to make kozhukattai .
Nowadays readily available store bought rice flour can be used to make delicious sweets due to lack of time to process the above step. Even it fits for me too. One thing to remember is to sift the flour to remove debris.
Kozhukattai moulds are also available in market to make perfect shape. This wll be helpful for first time user.
