Tri Color Dhokla ~ Republic Day Special


Today to celebrate our patriotism  we bring special Tri Color recipe.  Saffron power of strength & unity, White power to maintain peace, Green power to increase prosperity and harmony. Lets learn how to make this Tri Color Rice by following this easy recipe.


Here comes a Tri color Dhokla, a delightful and healthy steamed Gujarati snack. This combination will make a "Triranga"  Indian national flag. Lets learn how to make Tri Color Dhokla and follow this easy recipe.
Tri Color Dhokla

YIELD –2 plates

Ingredients:

Rice Flour - 3 cups
Urad Dal Flour - 1 cup
Sour Yougurt - 1 cup
Onion - 2 nos grated
Salt as per taste
Sugar - 1 tbsp
Turmeric Powder - 1 tsp
Frozen Green peas - 1/2 cup
Spinach - 1/2 cup washed and chopped
Fruit Salt (ENO) or Soda bi carb - 1/4 tsp

Tri Color Dhokla

For seasoning:
Oil - 2 tbsp
Curry leaves - 8-10 leaves
Mustard seeds - 2 tsp
Grated Coconut - 1 tbsp
Red Chili - 2 nos finely chopped 
Coriander 2 springs finely chopped

Method:

Tri Color Dhokla
  1. In a large mixing bowl mix rice flour, urad dal flour and yogurt. Add warm water to make a smooth batter. Soak it for overnight for fermentation.
  2. Just before preparing Dhokla, add grated onion, salt, sugar and fruit salt. Mix well and make a smooth batter.
  3. Divide this batter in 3 equal quantity to make 3 different colors.
  4. Keep one portion as it is for white color batter.
  5. Add Turmeric powder in 2nd portion for yellow color batter.
  6. Blanch green peas and spinach and make a smooth paste. Add this paste to 3rd portion to make Green Color batter.
  7. Pour Yellow batter in a greased plate to make a thin layer and steam cook it for 5-7 minutes.
  8. Now pour over white batter in a same plate on to the yellow layer and again steam cook it for 5 minutes.
  9. Now add green batter on to the white layer and steam cook it for 8-10 minutes. Before taking out the plate insert the toothpick until bottom of dhokla plate to check its cooked or not. If its done take out the plate from steamer. If not cook some more time.
  10. Give it a rest for another 10 minutes to cool down. Cut them into a diamond shape.
  11. Repeat the step no 7-10 for another plate.
  12. Heat the oil a pan and add all the ingredients of seasoning.
  13. Pour this seasoning on dhokla.
  14. Serve hot with Green and Garlic chutney.

Note:

1.Make sure each layer should be half cooked before adding another layer. If it is not cooked     well all batter might mix together and it will not turn out proper tri color layers.
2. You can also use khaman dhokla batter (besan and suji batter) for yellow batter.
3. For white batter you can also use Idli or dosa batter
4. For green color you can simply apply green chutney in between white and yellow layer for different taste and variation.
