Shrikand ~ Fasting Recipe

Shrikand is a sweet yogurt dessert which is also had during the Fasting Times. This is made from hung curd by straining the water completely from the curd. The preparation is so easy but the process takes time for the yogurt to be strained. Make this Shrikand to make a delicious treat for the fasting tastebuds.

YIELD – 2 SERVINGS

Ingredients:

Fresh Thick Yogurt - 2 cups
Refined or Confectionery sugar - 3/4 cup 
Saffron strands - a pinch
Milk - 1 tbsp.
Pistachio nuts chopped - 1 tbsp.
Almonds chopped - 1 tbsp.
Powdered Elaichi - 1 tsp.

Method:

  1. Take a clean muslin cloth. Tie the curd in this muslin cloth and suspend it from a little height with a bowl on the bottom to collect the dispensed liquid.
  2. Leave it for atleast 12 hours. 
  3. After 12 hours transfer the strained curd to a clean bowl.
  4. Warm the milk, add the saffron strands to it and set aside for 10 minutes.
  5. Add this mixture to the strained curd.
  6. Add the chopped pistachio nuts and almonds. Mix well.
  7. Add the powdered elaichi and mix well.
  8.  Keep refrigerated for atleast 1 hour.
  9. Serve cold.
  

 

Note:

  • Ensure that the curd doesn't have excess water. You can double check it by pressing it with a spoon before it is being transferred from the muslin cloth.
