Veggie Baked Bean Tacos

A Taco is a traditional Mexican dish  composed of a corn or wheat tortilla folded or rolled around a filling. It can be made with a variety of fillings, including beef, chicken, seafood, vegetables and cheese, allowing for great versatility and variety. I choose the fresh garden veggies with protein filled baked beans to fill the taco shells. Try this veg recipe of tacos to make delicious Veggie Baked Bean Tacos.

Veggie Baked Bean Tacos

YIELD –12 Tacos

Ingredients:

Tacos shell - 12 nos.
Olive Oil - 1 tbsp
Cumin - 1 tsp
Onion - 1 big size chopped
Garlic - 1 tbsp chopped
Tomato - 1 big size chopped
Backed Beans - 1/2 tin (approx 250 gms)
Salt as per taste
Chili Powder - 2 tsp
Coriander Powder -1 tsp
Zucchini -  1/4 cup chopped
Celery - 1/4 cup chopped
Capsicum - 1/4 cup chopped
Red chili - 1 big size (less spicy)
Bean sprouts - 1/2 cup
Lemon juice - 1 tbsp
Tomato Puree - 1 tbsp
Oil for frying
Mozrella Cheese - 1/2 cup grated for toppings
Lettuce - 1 cup chopped for toppings

Method:

  1. Heat the 1 tbsp oil in a frying pan. Add cumin seeds, onion and garlic. Saute well until golden brown.
  2. Add chopped tomato and backed beans in it. Add all spices i.e salt, chili powder and coriander powder in it. mix well.
  3. Add all vegetables i.e. zucchini, celery, chili, bean sprouts  capsicum. Add tomato puree and lemon juice as well. Mix well and cook for 5 minutes. Tacos filling is ready.
  4. Heat the oil in a frying pan and deep fry tacos shells with the help of pair of tongs.
  5. Just before serving add hot filling in tacos shells and top it with cheese and lettuce.
  6. Tacos are ready to serve.
Veggie Baked Bean Tacos

Note:

Instead of frying you can bake tacos in oven. Fill up the filling and cheese and keep them for baking on 300 F for 5 minutes. Top up with lettuce. Backed and healthy tacos are ready to serve.

If you can not find tacos shell easily, you can use medium size corn tortilla and deep fry them with help of pair of tongs. While frying hold it carefully to give it a shape of tacos shells.
