Soy Bean Coconut Sundal

The soya beans are excellent source of protein and is known as spice of legumes.Here today in this recipe I used dried white soy bean and you can use any variety of soya bean fresh or dried - white, red or black. This dish is a good source of protein especially for vegetarians,vegans and kids. The intake of  soya bean prevents from heart disease, reduce risk of osteoporosis, amino acids in soy combines well with cereals such as wheat, corn, rice.  Many forms of soy bean are used as soy milk, tofu, tempeh, nuggets and so on... Prepare this variety of snacks as after school snacks or as lunch box option.

Soy Bean Coconut Sundal

YIELD –2 servings

Ingredients:

Dried Soya Beans-1 cup
Onion-1large chopped
Green chilli-1-2 chopped
Ginger-1tbsp chopped
Grated Coconut-3-tbsp
Lemon Juice-1 1/2tbsp

For Seasoning:
Oil-1tbsp
Mustard Seeds-1tsp
Cumin Seeds-1tsp
Curry Leaves-few springs
Hing-1tsp

Method:

  1. Soak the soy bean for overnight or minimum 8 hours. Wash and pressure cook with sufficient water till soft. Drain it.
  2. Heat oil in a pan, add seasoning, onion, ginger, green chilli and saute till transparent.
  3. Add the cooked soy bean and toss well.
  4. Add required salt and combine the grated coconut with it.
  5. Turn off the flame after 5 minutes.
  6. Squeeze lemon juice and stir once before dish out.
  7. Serve with rice or as evening snacks.

Note:

If you want add grated carrot, chat masala for extra taste.
If you are able to use fresh green soya beans can try out with it and it will taste delicious.
