Spaghetti with Asparagus Basil Pesto

To surprise my husband for weekend  dinner special I made this Italian style Pasta. Here I tried Spaghetti with basil pesto sauce along with which I included Asparagus too. It really tasted great with mild, melting touch of cheese with basil and asparagus. The basil pesto sauce is made in just 2minutes and can be preserved for months in freezer. Cook pasta of your choice and spoon out the sauce add veggies and yum it.Try this style of pasta for a change.

Spaghetti with Asparagus Basil Pesto
Asparagus is loaded with full of Vitamin A,C, K and E. A good source of fiber and folate, packed with anti-oxidant and this spring veggie got anti-aging property too. It taste really good can blend well with other veggie too. 

YIELD – 2 servings

Ingredients:

Pasta Spaghetti- 250gms
Asparagus - 1bunch cut into 2" length pieces
Olive Oil- 1 tbsp
Water as needed to boil
Basil Leaves- 1 cup
Garlic -3 cloves
Parmesan Cheese- 1/4 cup( I used powder)
Pine nuts- 1/4cup
Pepper Powder to taste 
Salt to Taste
Olive Oil as needed for preparing sauce

 Basil Pesto Sauce

Method:

  1. Bring sufficient amount of water to boiling with a teaspoon of salt and oil.
  2. Add the spaghetti and let it cook for 8-10minutes. Drain it and rinse under running tap water to avoid stickiness.
  3. In the meantime blend together in the processor  basil leaves, garlic, parmesan cheese, pine nuts with olive oil, salt and pepper. while machine is running drizzle olive oil through the feeding pipe to avoid scraping down at the bottom. Transfer to the bowl.
  4. Now Heat a fry pan add olive oil and asparagus. Saute it for few minutes with lilttle salt added till crisp tender.
  5. Turn off the flame once it is done and add a 2tbsp of prepared basil pesto and let the cheese melt over it.
  6. In a serving plate place the spaghetti and spoon out the asparagus basil pesto on to the top and serve hot.
  7. Alternatively can mix the sauce with spaghetti before serving and its upto your choice.

Note:

If you wish can use fresh cheese but do not grind it instead add to the ground sauce and mix well to melt.
You can prepare this sauce in a large quantity and frost it in ice cube trays. Use it as required when needed to prepare pasta, pizza, wraps and spreads.

Spaghetti with asparagus and pesto sauce looks utterly delicious, love pesto sauce with anything even as a spread. Very nice recipe.
