Chole Bhature Recipe - Ezcookbook


Chole Bhature is very popular dish of North India. Chole bhature is a one hotpot mouth watering dish which is a combination of Chole - chickpeas cooked in spicy gravy and Bhatura - fried Indian puffed bread made with plain flour. Chole alone can also be served in different chat with tikkis, samosas and simply with bread. Enjoy this delicious recipe of Chole Bhature tonight.

Preparation & Cooking Time: 1 Hour

YIELD : 4 servings (8 Bhaturas)

Ingredients:

For Chole:
White Chickpeas - 1 cup (soak over night)
Onion - 1 big
Tomato - 1 big size
Ginger garlic paste - 1 tsp
cumin seeds - 1 tsp
Mustard seeds - 1/2 tsp
Hing - a pinch
Salt as per taste
Chili powder - 1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Tamarind paste - 1 tsp
Chole Masala Powder - 1 tsp (Add more to if you want to make spicy)
Oil - 2 tbsp

For Bhature:
Plain flour (Maida) - 1 cup
Sooji - 2 tbsp
Curd - 1 tbsp
Potato - 1 medium boiled and mashed
Salt as per taste
Oil - 1 tbsp
Oil for frying

Method:

 For Chole:
  1. Boil or pressure cook chickpeas with salt until soft. Drain water and keep aside.
  2. Make a smooth paste of onion and tomato using grinder.
  3. Heat the oil in a pan ; add mustard and cumin seeds. once they stop fluttering add hing and onion tomato paste. Also add ginger garlic paste. Saute well for 3 to 4 minutes.
  4. Add all the spices powder with salt. Also add tamarind paste. Cook for 2 more minutes.
  5. Add cooked chickpeas and mix well. Add water as required to adjust gravy consistency.
  6. Serve hot with Bhature.
For Bhature:
  1. Combine all the ingredients in a mixing bowl and form into a firm dough. Carefully add little water as required.
  2. Knead the dough properly and cover it with kitchen cloth for 1/2 hr.
  3. Divide the dough into 8 equal balls and roll out each ball into a circle.
  4. Heat the oil in a frying pan and deep fry all the bhature till they puff up and golden brown both sides.
  5. Drain them out from oil and keep it in kitchen paper.
  6. Serve hot with Chole.

Note: 

  • Do not dust the bhature while rolling with dry flour, instead grease little oil to rolling board and pin.  As you drop bathure dusted with flour in hot oil, it tends to get blackish spot.
  • When cooking for larger group to get gravy thickness, add one boiled and mashed potato or grind few of the cooked chickpea. Add this paste to the gravy, gives out extra ordinary taste.
