Aloo Methi

Aloo Methi is a side subji accompanying rice or rotis, combing the benefits of  aromatic methi with the ever popular potatoes. Methi an amazing herb has got many powerful medicinal properties and can cure a number of ailments, reduce cholesterol, helps treat diabetes, prevents hair loss, aids digestion, treats skin problems etc. Here's a easy recipe how to make Aloo Methi.
Aloo Methi

YIELD –3 servings

Ingredients:

Boiled Potato - 4 nos. cubed
Methi Leaves (Fenugreek leaves) - 2 cup finely chopped
Spring onion - 1/2 cup finely chopped
Salt as per taste
cumin seeds- 1 tbsp
Oil - 1 tbsp
Garlic - 2 pods finely chopped
Hing- a pinch
Turmeric Powder - 1/2 tbsp
Chili Powder - 1 tbsp
Dry Red Chili - 1 broken in pieces
Lemon Juice- 1 tbsp
Aloo Methi

Method:

  1. Wash methi leaves and sprinkle 1 tbsp salt over it and keep aside for 10 minutes.
  2. Heat the oil in a pan; add cumin seeds, dry chilies, garlic, hing and spring onion whites.
  3. Add boiled and cubed potatoes. Add salt, turmeric powder, chili powder. Mix well and cook for 3-4 minutes.
  4. Meanwhile wash methi leaves in running water and squeeze out all the water from it.
  5. Now add methi leaves, spring onion greens and lemon juice. Mix well.
  6. Cook for another 5-7 minutes.
  7. Serve hot with roti or Chapati.
