Do you wonder of how I was able to make this netted egg roll?? The whole Idea of making this Egg roll will be quite interesting, once I went to supermarket for my grocery purchase there I came through some book sale. I found some cooking books where I browsed with some interesting recipes inside and found this egg roll recipe in a fraction of seconds before billing my grocery and immediately the following next day I tried this dish to my daughter's after school evening snack and it resulted with excellent taste. I tried this for many times from then. This relishing delight can be prepared quick and filling healthy snack too.

Preparation & Cooking Time: 15 Minutes
YIELD: 8 Rolls
Ingredients:
Eggs- 3
All purpose flour- 3 tbsp
Green Capsicum- 1 medium
Carrot- 1/2 portion
Frozen Green Peas- 3 tbsp(defrost it)
Firm Tofu- 6 small cubes
Green Chilli -1 minced
Garlic- 1 tbsp minced
Salt To Taste
Oil-1 tbsp
Oil for fry

Ln Method:
- Beat the Eggs with the flour without lumps.
- Wash and cut diagonally the capsicum, carrot.
- Dice onion length wise.
- Heat a wok add oil, minced garlic, green chilli and saute till aromatic.
- Add onion and saute till transparent.
- Combine the tofu cubes and stir for few seconds.
- Add the veggies and saute till soft by adding some salt to make it cook.
- Remove from the flame and tranfer to the plate.
- Fill in a sauce bottle the prepared egg batter and keep it ready.
- Heat a flat griddle, drizzle some oil and squeeze of the egg batter very slowly by forming net pattern.
- Cook for few seconds and do not fry till brittle(cook for one side). Tranfer to the plate by placing uncooked top side to the bottom.
- Arrange the vegetable filling to one end of the prepared egg and roll it like springroll.
- Serve this Roll with hot and sweet tomato chilli sauce.

Note:
While folding for rolls handle the egg crepe carefully and do not break the net too many stuffing.
If you are not an egg eater then replace egg with besan/chickpeas flour.
Add/ adjust ingredients according to your taste. You can add Paneer cubes, French Beans as per your choice.
