Ridge Gourd With Peanut Masala

Roasted peanut is powdered with red chilli to add spice masala for the curry. It is then added to the ridge gourd to bring out the excellent aroma of peanut. This is a semi gravy recipe and  can be served along with any main course as a side dish. Try this simple and quick vegetable curry for lunch menu.

Ridge Gourd with Peanut Masala

YIELD –2 Servings

Ingredients:

Ridge Gourd-1 large
Onion- 1 large chopped
Roasted Peanuts- 2 tbsp
Dried Red Chilli- 4-5
Salt To Taste
Oil- 1 tbsp

For Seasoning:
Gingelly Oil-1tbsp
Mustard Seeds-1 tsp
Cumin Seeds-1 tsp
Split Urad Dhal-1 tsp
Hing-1 tsp
Ridge Gourd with Peanut Masala 

Method:

  1. Scratch and discard the Ridge gourd thick outer rind and finely chop the pale green part.
  2. Blend together roasted peanut, red chilli, salt using mixer or spice blender.
  3. Heat oil in a wok, add seasoning.
  4. Stir in the chopped onion and saute till transculent.
  5. Add the chopped ridge gourd and little salt and cook till becomes soft( do not add water  as the veggie will ooz out water when it starts cooking).
  6. Combine the peanut spice powder at the final stage of cooking, stir well to mix  and let it stand few minutes.
  7. Serve hot curry with steamed rice, Roti N Paratha.

Note:

Do not overcook ridge gourd as this will result in mashed condition.
