Carrot Halwa

Carrots are always a favorite food for the kids. I used to give carrots to my son telling him,  if he eats carrots then his eyesight will be sharp. Carrots are good source of vitamin A, beta carotene and anti oxidants. Try having one carrot per day to have a glowing skin. Try making this carrot halwa in a microwave oven and relish by its taste.

YIELD – 3 SERVINGS

Ingredients:

Carrot grated - 2 cups
Milk - 2 cups
Sugar - 1/2 cup
Ghee - 1 tbsp.
Cashew - 1 tbsp.
 

Method:

  1. Microwave ghee in high for about 30 seconds in 100%power.
  2. Add grated carrots and microwave in high power for 5 minutes.
  3. Now add milk, sugar and microwave in 100% power for 10 minutes stirring occasionally.
  4. Now microwave it at 60% power for another 10 minutes.
  5. Add cashews and microwave in 100% power for 2 minutes or until all the liquid evaporates.
  6. Serve hot. 

Note:

  • The whole process should be carried out in an open bowl.
