Veg Sushi Rolls

Sushi is a authentic dish of Japan and very popular worldwide. Its a wrong impression in many people that sushi means raw fish, in real sushi indicates dishes which use sushi rice seasoned with sushi vinegar. You can make variety of sushi filled with any  vegetables or your choice of sea food. Try this vegetarian version of sushi rolls by following below steps.
Veg Sushi Rolls

YIELD – 12 rolls

Ingredients:

Sushi Rice - 2 cups (Short grain gluten rice)
Noori Sheets - 3 sheets
Carrot - 1 no. Julienned
Japanese Cucumber - 1 small julienned
Red capsicum - 1 no. Jullienned
Green lettuce - 3 leaves

Sushi vinegar
Rice Vinegar - 1/3 cup
Sugar - 2 tbsp
Salt - 1 tbsp


For serving
Light soy sauce
Wasabi paste (optional)

Method:

  1. Wash and soak rice for 1 hr. Cook the rice in rice cooker until cooked well. Let it steam for 10 mins.
  2. In a sauce pan mix all ingredients for sushi vinegar and heat it until sugar dissolved. Cool it and keep aside.
  3. Spread the hot rice in a large plate and sprinkle sushi vinegar on rice. Toss them slowly by wooden spatula. Make sure rice don't get smashed. Avoid using any metallic utensils while preparing sushi to  prevent interaction of sushi vinegar. Try to use sushi rice right away for best results.
  4. Place one noori sheet on counter in front of you. Spread the sushi rice evenly over the sheet for about 1/2 cm thick layer. Leave the top side about 2" uncovered.
  5. Now place the lettuce leaf on it and spread wasabi paste on it. You can avoid wasabi paste as it has very strong flavor which many people would not like. 
  6. Now place vegetable slices on the lettuce 
  7. Start rolling noori sheet very firmly starting at the bottom. Wet the uncovered upper side with water and seal the roll. Repeat the procedures for other rolls.
  8. cut the rolls in 4 parts with sharp knife.
  9. Sushi rolls are ready to serve with soya sauce and wasabi paste.

NOTE: 

Variety of options available to substitute noori sheets if you don't find it in your nearby store. For example any blanched green leaf which is big in size to make the rolls  i.e lettuce, cabbage, colocasia leave.  you can also use soya paper or rice paper.
