Raw Mango Rice / Mamidikaya Annam

Tickle your taste bud with this yummy raw mango rice and make your meal complete with mango for this summer. Do you know the benefits of raw mango and why summer is the only season for it to crop??? Eating raw mango will help us guard from negative affects of excessive hot temperature during summer. Have a small bite of raw mango with salt sprinkled, this will really quench your thirst.

Raw Mango Rice / Mamidikaya Annam

YIELD –2 Servings

Ingredients:

Steamed Rice- 2cups
Grated Raw Mango- 1cup(
Grated Carrot- 1/3 cup
Roasted Peanuts-2 tbsp
Green Chilli-4no slit lengthwise
Curry Leaves- 1tbsp chopped
Coriander Leaves- 1 tbsp chopped
Turmeric Powder- 1/2 tsp
Salt To Taste
Oil/ Ghee- 1tbsp for seasoning(Mustard, Split Urad Dhal,Chenna Dhal,Asefatodia)


Raw Mango Rice / Mamidikaya Annam 

Method:

  1. Spread the hot steamed rice in the plate with little oil applied on top and cool it.
  2. Wash and peel mango, finely grate using vegetable grater.
  3. Heat oil/ghee in a  non-stick fry pan. Add seasoning and roasted peanuts, green chilli and stir for 2 minutes.
  4. Add grated carrot, turmeric powder and saute for a minute.
  5. Combine grated raw mango and stir well.
  6. Add rice, salt as required and mix well.
  7. Sprinkle little water and cook covered for 5 minutes(this will help to make rice soft).
  8. Garnish with chopped coriander leaves and grated carrot.
  9. Serve with potato fry and papad on the side for perfect combination.

Note:

  • Adjust chilli according to your taste.
  • For variation grind grated coconut, raw mango and green chilli. Mix well with rice, season it and serve.
