Minty Broccoli Paratha

Broccoli is a king of low carb vegetables and contains almost all required nutrition like iron, calcium, all types of vitamins, foliate and fiber. But many people dont like its taste and avoid eating it. Try this minty broccoli paratha in which mint helps to balance the overall taste. You may also like to add cheese or paneer to pamper your taste buds.
Minty Broccoli Paratha

YIELD –10 Parathas

Ingredients:


Wheat Flour - 1 cup
Salt - as per taste
Oil


For Stuffing
Broccoli - 1 cup grated
Mint leaves - 1/4 cup cup finely chopped
Coriander leaves - 1/2 cup finely chopped
Cabbage - 1/2 cup grated
Onion - 1 big grated
Ginger garlic pate - 1 tsp
Garam masala - 1 tsp
Chat masala - 1 tsp
Pepper powder 1/2 tsp
Salt as per taste
Oil - 1 tsp

Method:

  1. Combine wheat flour, spinach, salt and oil. Kneed into a soft smooth dough. Keep aside.
  2. Heat the oil in pan; add onion and ginger garlic paste. Add broccoli and cabbage. Saute.
  3. Add all spices and cook until broccoli are cooked well. Switch off the flam and let the mixture cool down for 10 minutes.
  4. Add mint and coriander leaves into the mixture.Mix well.
  5. Roll out two medium size roti from the dough. Add filling in the center of one roti and cover it properly with second. Roll it again slightly to make it one whole paratha.
  6. Cook it on hot griddle using oil until both sides are golden brown.Repeat the procedure for another Parathas.
  7. Serve hot with curd or Raita.
