Capsicum Lemon Rice

Everytime we use to make lemon rice with regular procedure of rice,lemon juice and green chilli seasoning. Here today i tried with some simple modification from usual one by adding capsicum and ginger which adds more taste to the lemon rice. Its a perfect recipe for lunch box and very easy to prepare too.
Capsicum Lemon Rice

YIELD –2  Servings

Ingredients:

Steamed Rice-1 1/2 cup
Tri capsicum-1/2 cup finely chopped
Green Peas-1 tbsp(cooked/frozen)
Onion-1 medium chopped
Green Chilli-4 split lengthwise
Curry Leaves-1 tbsp chopped
Turmeric Powder-1/4 tsp
Ginger-1 tbsp crushed
Nutmeg/Jadhikai powder-1/4 tsp(optional)
Cucumber- 1 tbsp chopped
Coriander Leaves-1 tbsp chopped
Salt to taste

For Seasoning:
Mustard Seeds-1 tsp
Cumin Seeds-1 tsp
Roasted Peanuts-1 tbsp

Method:

  1. Heat a wok add a tbsp of oil, add seasoning, onion, ginger saute well.
  2. Add green chilli, curry leaves, capsicum and saute till soft.
  3. Add turmeric powder, salt, green peas and rice, mix everything well to blend.
  4. Sprinkle some water and cook covered on slow flame for 5 minutes(this will help rice to get soft ).
  5. Check for the taste and add salt if required.
  6. Stir in a tbsp of lemon juice, nutmeg powder and garnish with coriander leaves , cucumber chops.
  7. Serve with any spicy Curries and papadom.
