Aloo Tindora Subji

Tindora also known as Ivy gourd, gentleman's toe, tondli etc. and very popular in many parts of India. It can be cooked as it by itself or can be combined with potato. Prepare this tasty subji for lunch and serve with roti/chapati.
Aloo Tindora Subji

YIELD – 3 servings

Ingredients:

Tindora/Ivy Gourd - 250 gms chopped lengthwise
Potato - 1 big chopped lengthwise
Garlic Chutney - 1/2 tsp (If dont have chutney use garlic paste and 1 tsp of chili powder)
Salt as per taste
Turmeric Powder - 1/2 tsp
Coriander Powder - 1 tsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Oil - 1 tbsp
Roasted Peanuts - 1 tbsp for garnishing

Method:

  1. Cut Tindora and potato in lengthwise and wash it.
  2. Heat the oil in a pan; add mustard and cumin seeds with garlic chutney. saute chutney in oil and
  3. Add tindora and potato and saute for 2-3 minutes.
  4. Add salt, turmeric powder and coriander powder. mix well.
  5. Add 1/4 cup of water and cover the lid of pan. Cook until cooked well.
  6. Once done sprinkle crushed roasted peanuts. Serve hot with Roti.
