Tomato Briyani

Tomato Briyani

YIELD –2 Servings

Ingredients:

Basmati Rice -1 cup
Onion-1 Large slice  lengthwise
Tomato-3 medium Finely chopped
Ginger Garlic Paste-1 1/2 tsp
Green peas- 1/4 cup(frozen)
Coriander/Mint leaves-1/4 cup finely chopped
Turmeric Powder-1/2 tsp
Red Chilli Powder- 1tsp
Coriander Powder-11/2 tsp
Garam Masala Powder-1/2 tsp
Green Chilli-1 split lengthwise
Salt-2 tsp
Oil/Ghee-1 tbsp

Whole Garam masala:
Bay leaf-2
Cloves-2
Cardamom-2
Fennel Seeds-1 tsp
Cinnamon stick-1/2 inch

Method:

  1. Wash and soak one cup of basmati rice with two cups of water.
  2. Heat a deep pan add oil/ghee, add whole garam masala and saute it for 1 minute.
  3. Add the sliced onion and ginger garlic paste, saute till the raw smell disappears.
  4. Add chopped tomato and saute till soft.
  5. Add all masala powders and mix well.
  6. Add in the chopped coriander/mint leaves and saute well till becomes thick gravy.
  7. Now pour in the soaked basmati rice water without rice and bring to boil.
  8. Add salt, frozen green peasand soaked rice and cook covered on slow flame until the rice is done soft.
  9. Garnish the rice with fried cashew nuts and chopped coriander leaves.
  10. Serve Tomato Briyani with cucumber raita and papad. 

NOTE:

For variation use potato, spinach and reduce the amount of tomato instead of that add lemon juice at the end.
