Thai Pineapple Rice ~ Vegetarian Fried Rice

Classic signature dish from Thailand. Homemade Thai style Pineapple fried rice with essence of pinapple chunks with spicy touch of curry powder.


I was thinking to prepare Thai Pineapple Rice since one of my good friend shared her tempting recipe. Today I got a chance to make it and it came out excellent and got praise from my food critic husband. Thanks Aruna for sharing your recipe.,br /> This recipe taste super delicious with tangy sour chunks and rice flavored with soy sauce and chilli powder. Even added some raisins, spring onions and thai fresh red chilli makes the rice looks very colorful and tasty. Though Essence of pineapple is dominating the rice much but I swear you cannot find it sweet anymore. Try the thai style pineapple rice at home for a change.,br />

YIELD: 4 SERVINGS
Ingredients:
Fresh Pineapple chunks – 1/2 cups
Cooked Rice - 3-4 cups
Olive Oil – 2 tbsp.
Onions - 2 medium size finely chopped

Garlic - 3 cloves finely chopped 
Thai Red chili – 3 nos. finely chopped
Frozen peas - ½ cup
Carrot - 1 small grated
Raisins - ¼ cup
Whole Cashews - ½ cup roasted unsalted
Spring Onions - 3 springs finely sliced
Fresh Coriander 1/3 cup


SAUCE:
Light Soy Sauce - 3 tbps
Curry Powder - 2 tsp.


Method:


  1. In a cup, stir the soy sauce together with the curry powder.
  2. Heat the oil in a large frying pan. Sauté onions, garlic, and chili.
  3. Add the carrot and peas. Stir-fry 1-2 minutes.
  4. Now add the pineapple chunks, raisins and cashews. Slowly add the soy sauce mixed with curry powder.
  5. Finally add the rice, coriander and spring onions and mix well. Check salt / soy sauce.
  6. Serve with Thai Mango Salad.

Note:
  • You can add scrambled egg if you an eggetarian.
