Quick Potato Curry

Quick potato curry is prepared using onion,tomato with other spices as quick as possible.This can be served as best side dish with any main course food.


Quick Potato Curry
YIELD: 2 SERVINGS

Ingredients:
Potatoes - 1 large chopped
Onion – 1 large finely chopped
Tomato -  2 medium finely chopped
Ginger – 1tbsp grated
Chilli powder-1/2tsp
Coriander powder-1tsp
Garam masala-1/2tsp
Tumeric powder-a pinch
Kasthoori methi-1tbsp
Coconut milk-2tbsp(optional)
Salt as per taste

Method:
1.    Wash Potatoes and peel the skin,finely chop into small cubes.
2.    Boil the potato chops in enough water with salt ,drain potatoes and keep it aside.
3.    In a deep pan add one tbsp oil ,add seasoning.
4.    Add onion,chopped ginger,tomato and saute well.
5.    Combine all the spice powder, add into the onion and saute for about 5minutes.
6.    Now add boiled potato,salt blend well to mix with all masala.(add water as required for gravy)
7.    Add kasthoori methi and 2tbsp of coconut milk and cook for another 5 minutes.
8.  Garnish with chopped cilantro.
9.  Serve this hot Quick Potato Curry with Briyani,rice,pulao,roti,naan etc.

Tip:
You can even pressure cook all  the ingredients with potato directly for about 2 sounds instead of following above procedure since this step will consume very less time for cooking.
