Exotic Baby Vegetables

 YIELD – 2 servings

Ingredients:

Baby Potatoes - 10 pcs (Peeled and boiled)
Baby Brinjal - 10 pcs
Baby Tomato - 10 pcs
Baby Onions - 10- pcs
Garlic - 3-4 pods finely chopped
Spring onion  - 5 springs finely chopped
Salt as per taste
Pepper powder as per taste
Garlic Chili Sauce - 1 tsp
Soya Sauce - 1 tsp
Oil - 2 tsp
Exotic Baby Vegetables
 Method:
  1. Wash Brinjal and tomato and slit them lengthwise without halving.
  2. Heat the oil in a frying pan. Add Onions and garlic and saute.
  3. Now add slitted brijals and tomatoes. Add salt and Pepper powder.
  4. Cover the lid and cook turning them occasionally until brinjals are cooked.
  5. Add boiled potaotes, soya sauce and chilli garlic sauce. Add lil water if required. Cook for 5 mins.
  6. Finally add spring onion and mix well. Serve hot with your choice of Roti N Paratha.
