YIELD – 2 servings
Ingredients:
Baby Potatoes - 10 pcs (Peeled and boiled)Baby Brinjal - 10 pcs
Baby Tomato - 10 pcs
Baby Onions - 10- pcs
Garlic - 3-4 pods finely chopped
Spring onion - 5 springs finely chopped
Salt as per taste
Pepper powder as per taste
Garlic Chili Sauce - 1 tsp
Soya Sauce - 1 tsp
Oil - 2 tsp

- Wash Brinjal and tomato and slit them lengthwise without halving.
- Heat the oil in a frying pan. Add Onions and garlic and saute.
- Now add slitted brijals and tomatoes. Add salt and Pepper powder.
- Cover the lid and cook turning them occasionally until brinjals are cooked.
- Add boiled potaotes, soya sauce and chilli garlic sauce. Add lil water if required. Cook for 5 mins.
- Finally add spring onion and mix well. Serve hot with your choice of Roti N Paratha.
