Coconut Cabbage Rice

Coconut Cabbage Rice is made with very basic ingredients. This dish is basically a kerala style food. Steamed rice is mixed with coconut, cabbage and with other ingredients to spice it up. Served with crushed pappad on top.

Coconut Cabbage Rice

Ingredients:
Basmati rice - 1 cup (cooked)
Grated Coconut - 1/2cup
Cabbage - 1/2cupfinely shredded
Green Chilli  - 4 finely slited
Curry Leaves - 1spring
Cilantro - 4 springs finely chopped
Cumin seeds -1tsp
Cashew nut - 6 no
Salt to taste
Coconut oil - 11/2 tbsp

Method:
1.      Wash and soak rice in 2cups of plain water.
2.      Pressure cook with same water for 3 sounds and keep it aside with 1/2sp oil applied on top in a plate.
3.      Heat a deep bottom fry pan add oil ,cumin seeds, cashew nut, green chili, curry leaves and stir well.
4.      Add shredded cabbage and sauté it for 3 min.
5.      Combine grated coconut to it and again sauté for another 3 min.
6.      Add steamed rice, salt and mix well to combine all ingredients.
7.      Garnish with cilantro chopped.
8.      Serve hot coconut cabbage rice with pappad n potato curry.
