Brinjal Rice


YIELD – 4 SERVINGS

Ingredients:

Rice - 1 cup
Brinjal - 250 grams
Coriander seeds - 1 tsp.
Cumin seeds - 1/2 tsp.
Dry chilli -  4
Turmeric Powder - 1/4 tsp.
Salt - as per taste
Oil - 3 tbsp.

Method:

  1. Cook rice and keep aside.
  2. Clean and chop brinjal to cubes.
  3. Heat a pan. Add coriander seeds. Once it is fried add cumin seeds and dry chilli. Put off the stove.
  4. Grind the above to a coarse powder.
  5. In another pan heat oil. Add the brinjals and cook until the brinjals are tender.
  6. Add turmeric powder, a little water and salt and saute for 2 minutes. 
  7. Once oil oozes out, add the ground masala powder and saute for 2 minutes.
  8. Now add the cooked rice and mix well.
