Baked Tomato Omelet With Toast 

YIELD – 2 Serving

Ingredients:

Whole Grain Bread-4 slice
Egg-2 beaten
Onion-1chopped
Garlic-1tbsp
Chilli Powder-1/2tsp
Coriander Powder-1/2tsp
Tomato-2 chopped
Parsley-4tbsp
Salt-1/2tsp
Grond Pepper-1/2tsp(optional)
Cilantro-1tbsp chopped
Cheddar Cheese-1tbsp grated


Method:



  1. Heat oil in the fry pan add onion,garlic,saute well.
  2. Add grated carrot,shredded cabbage and stir well.
  3. Stir in the chilli powder,coriander powder and mix well.
  4. Add the chopped tomatoes,cook till soft and thickened for about 10 minutes.
  5. Stir in parsley,salt and pepper.
  6. Smooth the sauce evenly in pan and pour beaten eggs over the top.
  7. Cover and cook for about 10-15 minutes on low flame.
  8. Garnish with cilantro and grated cheddar cheese.
  9. Serve this Baked Tomato Omelet With Toast for breakfast.
